What are you making for Easter or Passover dinner?

What''s on your menu?

My husband and I aren''t very religious, and we don''t really celebrate Easter, but I keep thinking that we should have something special for dinner on Sunday.
 
We had our Passover seders at home this year. My menu:

Matza & harroseth (ground up fruit & nuts)
Matza ball soup (really rich chicken stock with a sofrito & matza balls)
hardboiled eggs (simmered over night in onion skins)
Basque lamb shanks (slow cooked in tomatoes & wine with sweet potato & olives)
lemon & herb roasted potatoes
ginger-shallot green beans
steamed scallions
pears poached in a red wine sauce served over a dollop of soy icecream


ETA: We don't celebrate Easter. My grandmother does Easter each year and serves ham, mashed potatoes, gravy, pistachio pudding, fruit salad, dinner rolls, and assorted baked stuff.
 
We''re going to a friend''s house for dinner but we''re bringing the main course. I''m making a standing rib roast (prime rib on the bone). I''m not sure what else we''re having though.

Other traditional dishes for Easter are:
Ham
Lamb
Asparagus
Spring peas
 
I''m debating between lamb and stuffed flank steak. Nom nom nom.
 
We are having cheese ball and pate for appetizers, ham, scalloped potatoes, broccolli and cauliflower salad, rolls of course, someting else I cant remember right now and then lava cake for dessert. Should be pretty good.
 
The only things on my shopping list right now include ham and beer. Also, planning a salad of some sort, an apple pie desert, rolls, something for the kids to drink (besides milk or water), oh, and mashed pototatoes (almost forgot to include that).

Really, I would be happy with just the ham and beer. So would DH. The kids would be kinda mad though even though they could live off of chocolate bunnies for the evening.

Because of family coordination, our seder will be Saturday night. Also, although we''re raising our children Jewish, my wife is not Jewish, so...

...we too have a tradition of doing Chinese. We have a regular seder otherwise. But, I don''t want myself or my wife to be detailed with cooking.

Probably, though, we''ll add matzo ball soup, which our boys like especially.
 
I hosted the first night of our family's seder this year. We had 20 people total, it was so much fun!

My menu:

Mains
- Beef brisket
- Roast chicken
- Potato kugel

Starters/Sides
- Matzah ball soup (made my own chicken stock for the first time ever!)
- Passover honey rolls
- Steamed veggies (broccoli, carrots, cauliflower, and asparagus)
- Deviled eggs
- Haroset (My mom brought this. YUM!)
- Gefilte fish

Desserts
- Apple kugel
- Homemade coconut macaroons
- Chocolate biscotti
- My cousin made this amazing chocolate cake dusted with cocoa and smeared with a light frosting type of thing, and then rolled it up. It looked like a giant Ho-Ho and it was DELICIOUS. (And kosher for Passover, of course, which makes it even more amazing that it tasted good.)

I get serious Easter envy when I look at all the fun Easter recipes. And the desserts are just too cute to eat! Easter is one of my favorite times of the year because I LOVE Cadbury Mini Eggs and you can only buy them around this time. (Is it bad that I ate a $6.99 bag of them last week? By myself?)

I''m at my in-laws this weekend - we''re going to an aunt''s house for dinner tomorrow, but his mother is bringing cabbage rolls, ham, and a layered lemon pie (which I will likely help make)
we will also have turkey and rice, along with various veggies..

Our Easter dinner menu for two is set:

Apple bourbon pork tenderloin
potatoes of some sort -- either garlic roasted red potatoes or mashed
veggies
ice cream for dessert

No. Those are just two different transliterations from the Hebrew word.
I've always used "matzah" because it's a better transliteration (to my ear and eye), as it most closely follows the way the word is actually pronounced.

Any way you spell it, it still tastes like cardboard.

I guess we are bad...
We are going to our church to eat. In Eastern Orthodox religion, Easter is more important than Christmas. It is the biggest celebration and feast of the year. I can not even tell you what is there - I have to make a list. And since women in our church are notoriously good cooks and I am notoriously lazy...we are cutting corners.
We may either join the Vigil or not. Anyhow, with the sermon starting at noon or 1 pm our Easter feast will be around 4 pm...close to dinnertime.
And we should have observed the Lent but of course we did not.

Funny, I've only ever seen it spelled Matzah or Matzo in transliteration. But DH laughed at my grocery list last week as it was mostly in Hebrew since I don't do well with language switching. So hard to when menu planning childhood recipes! We tried a new date based haroset this year, it really captured the idea of mortar! I discovered that horseradish is not a good combo with pregnancy reflux. We haven't told our families that we are probably going to name the baby Elijah, so DH and I were giggling about him drinking all that wine.

Happy Easter to those who celebrate it today! For the rest of us, we have to just rejoice in HH's bday!

We had roast chicken stuffed with grapes. Deliah Smith recipe that I''ve never tried before. There were 6 of us, and two chickens. Not a bite left, so I''ll count that as a success.

Schzarlottke (Polish apple pie) for dessert - my friend''s mother''s recipe. It is beyond delicious, but the pastry has so much butter in it that I don''t dare to make it more than a couple of times a year. If you''re very quiet, you can probably hear our arteries hardening...

I''d love apple pie for desert, but you can''t buy Bramley''s over here very easily and as we British all know, once you''ve had apple pie made with Bramley''s, nothing else will do.

Gailey, this pie works best with very sweet dessert apples. Polish apples tend to be very sweet and juicy, and they''re made into a jelly with spices and lemon, then baked in the pastry. This is the best apple pie I''ve ever had, and it doesn''t need bramleys. Want the recipe?
