We love eating out but we haven''t done it much lately--been having way too much fun cooking! Although I totally do buy boneless/skinless chicken breasts. I get them at costco and keep them in the freezer and just take them out when I need them. A lot easier than trying to debone a chicken. We usually just make stock when we roast a whole chicken.

Planning meals ahead of time is definitely the way to go--that has been one of our New Years resolutions and it has been awesome.

Hells yes! Crock pots are awesome. We just did an entire batch of pinto beans the other day. Throw in dried pinto beans, a grated onion, a grated potato, a sliced up jalapeno and a few sliced up cloves of garlic with enough water to cover by about 2 inches, add some salt and cumin, then let it simmer all day. Nom nom nom.

Edit: Pinto beans, not pinot beans! Guess I've been drinking too much wine lately.

I like to do big batches of things like chili, beef stew, chicken soup, risotto, etc on Sundays and then freeze it for lunches and quick meals during the week

Doooooo iiiiiiiit.

The lentil stew I just ate came from the crock pot. Dried lentils, cubed potatoes, diced onions, canned diced tomatoes, beef broth, and spices. Turn on. Leave. Work all day. Come home, stir in fresh spinach, allow to cook through, serve with grated parmesean.

It was dinner Tuesday. A had seconds. Then he had it for lunch yesterday, I had it for lunch today, and there's still over a serving left in the fridge.
 
That sounds yummy! Mine was 1lb dried lentils, chopped carrot, celery, onion, garlic, beef stock, cumin and italian sausage.

The other amazing thing about Crock Pots is that you can put really crappy cuts of meat in them and then because they slow cook all day, they end up all tender and delicious. Pot Roasts in particular are great for guys who like lots of meat. You can save a ton of money by giving large portions of really cheap meat slow-cooked all day til it''s amazingly tender.

And while I''m up there: PEOPLE WHO STEAL FOOD OUT OF THE FRIDGES AT WORK SHOULD BE SHOT. Okay. Maybe not shot. But seriously, for the second time in a week, someone stole my officemate''s yogurt. Seriously!?!? How do you DO that!?!?! And it''s not like there''s another yogurt in there and someone just took the wrong one. Oh no. Someone blatantly took HER yogurt.

The exceptions being January 1 (us Polocks think it''s lucky to eat pork on New Year''s Day) and sometimes when we go out to eat...since sometimes a porkchop is just too good to pass up!!!
 
In a totally unrelated tangent, I think I may have found a gym for us to join! It''s a community center that is relatively close by and is very reasonable. Includes use of the pool, fitness classes, aerobics center and weight room. I think we''re going to go drop by and try it out this weekend.

K''s HDL is really low (even though his other stuff is fine) and that really worries me. I think dropping 30 pounds and exercising more would really really help.

Oh yay! Reasonably priced is awesome. And so is a pool! I actually like working out together with A...so hopefully you and K will enjoy going together, too!

T doesn't either, after effect of getting very sick off of pork when he was overseas while in the army. He doesn't like lentils either.

I hope it helps--I''m worried about him. Our diet is already really cholesterol friendly so I think the exercise thing is the biggest problem. Hopefully belonging to a gym will provide him with some motivation.

Bring it all back to the money thing. "We can''t spend X amount a month to NOT GO...and the more we go, the cheaper it is per time."

That really helped get my butt out the door when I had to pay for a chain gym before i started at the PTO.
