I'm trying a new recipe today... Tomato Pie! We have a ton of tomatoes from our 4 plants this year (we've given away over 5 pounds) and some of the more ripe ones went into today's pie. I hope it turns out well. Here's a picture of it just going into the oven. I used Paula Deens recipe, well mostly at least ;)

Anyone else baking summer fare today?

Looks yummy! I'm thinking of baking apple muffins with my kids. Our son started kindergarten and has to take a snack to school. These muffins are made with whole wheat flour, very little sugar, all natural applesauce and 2 apples, so they're pretty healthy. However, living in Atlanta, it's so hot I try not to use my oven more than necessary in the summer...


Let us know how the pie tastes please.
 
That sounds delicious too Yenny. I know what you mean about being hot! Ugh, It's in the 90's with a heat index pushing a hundred... blech! That's why I'm baking early

Mmmmm... I love tomato pie! I might bake bread today since we are running low but I have zero room in the freezer for the extra so I'm not sure. Its not really a "summery" thing though.

I do too now! I have to say it came out fantastic! Why did it take 25 years for me to find this out?????

You can freeze the dough if you don't have room for a baked loaf. Instead of letting rise again before baking, wrap in some freezer paper or plastic wrap (just make sure it doesn't get caught in the creases in the dough, it's a pain to unwrap then). When you want to bake it, just let it defrost on the counter. When it's defrosted, it starts to rise on it's own. You can defrost in the fridge if you want more control of the rising process.
 
I'm baking a Mexican Chocolate Cake today.

It's pushing 100 degrees, but I need a dessert to take to a friend's house for dinner.
Oh well, the cake and some vanilla Blue Bell will cool us off. :tongue:

What is this Mexican Chocolate Cake of which you speak? I've never heard of it! And I eat a lot of cake! lol
 
Baked a carrot cake with cream cheese frosting to be eaten by my family tonight. My favorite carrot cake recipe and it turns out perfect every time.

A couple weeks ago I made white cupcakes with marshmallow cream filling and fresh strawberry frosting for my sister's birthday. They were delish.

Thanks for the idea but I honestly don't even think I have room for dough. Both of our freezers are STUFFED! lol I guess I could maybe finish the chocolate ice cream and that would give me a little room... :naughty:

(I looked through many recipes and this one looked the best. Very quick and easy!)

I pureed the strawberries in the blender instead of chopping them. (I don't typically like strawberries, so I didn't want to bite into a chunk of one.) It worked really well and gave it a pretty pink color.

The cupcakes were a big hit!
 
Davi: By the way, the tomato pie looks amazing! Tomatoes are one of my very favorite foods!
