that said, maybe i can still go with what @yssie laid out and try for some type of recourse.

A spacer would be a delicate band that will break the stack and also protect rings from rubbing into one another. It can be plain, textured or even with pave and in your wife’s case, I really think that it will help seprate visually the two rings.

I actually don't think it was unreasonable to expect a closer match...it's the vendor's job to know and explain the limits of what they can do. Too much time may have passed now to get a satisfactory resolution from Vatche, in which case options include stacking a 3rd plain or engraved band (maybe even a bit thicker than a spacer) in between to break it up or to selling the band for the most you can recoup and get a deliberately non-matching / metal only band as mentioned above. good luck!
