on eternity style e-rings, some like diamonds all the way around, some like to leave very little plain shank at the bottom for possible future growth and so that the ring isnt damaged (i.e. taking diamonds down to 5 and 7 o''clock).

No, I would rather have it made a tiny bit bigger and put in some sizing beads that could be taken out later.
ditto. although, my ring is only 3/4 diamonds and currently a little big. I still won''t size it b/c I think once you mess with sizing any type of setting with diamonds in the band it changes it a bit. I''ve heard too many stories of stones falling out after a ring has been sized. I''m probably going to get a small sizing bar put in.
I would go for diamonds all the way around, because the true full eternity creates such a beautiful look. And yes, every time you size a ring, it warps the shank, and that is especially important w/ an eternity. You don''t want your stones to pop out!
If you''re worried about fluctuating finger sizes, then size it just a little (but not too) loose. You can always get ring guards/stacking rings to keep it in place.
