Question about height of setting

I'm a total newbie, so please forgive my ignorance.

I like halo settings, and I'm particularly interested in something similar to this: http://www.bluenile.com/build-your-own-ring/floating-halo-diamond-engagement-ring-14k-white-gold_21446?elem=img&track=product . The only thing I'm not wild about it how far the diamond sticks out of the halo. I'm working with a local jeweler...Is it possible for a jeweler to lower the height of the diamond? That is, can he set the diamond so that it is farther "inside" the halo?

Oh yes, that diamond is set too high. It can be set lower with prongs, or at the same height as the halo if bezeled. Look at the height of this stone on the video, which, in my opinion, is set perfectly.

That one is lovely. Just to clarify: do I need to pick a different setting, or can a jewler set the diamond higher or lower within a given setting? Stated differently, using two copies of the same setting, can a jeweler set a diamond both "high" and "low" in that same setting?
