Proposal In Vail/Beaver Creek ... Advice, Please!!

I am only weeks away from spending some time in Beaver Creek, Colorado with my girlfriend and am trying to plan a truly romantic atmosphere for my proposal. Is anyone familiar with a secluded, yet easily accessible, place where we could watch the sunset? Has anyone ever eaten at Splendido''s? Any ideas, thoughts or suggestions would be greatly appreciated!!!!!!!!!!
