Can spaces like these cause the stone to get loose or the girdle chip more easily? The setters have been great about addressing my concerns and they''re going to fill in the spaces for me, but I was wondering what you guys thought.. am I being too paranoid here?

I can't tell a lot from the pictures, and I am by no means a master goldsmith, but from the looks of the prong it appears to be set beautifully.

The prong appears to be well mated to the stone above and below the girdle. The fact that the prong is relieved so as to not touch the girdle is, I believe, a very good thing and probably intentional.

So long as it is secure it should be fine, the setting is just fine.
The only way to get more in there is to flow solder into the spaces. however in doing so it will soften the prongs as it will make the metal "dead soft" making them more prone to bending, when they are set the metal is automaticly "work hardened" keeping them from pulling back with ease. id leave it alone, its fine.
