Can someone please explain what role these play in a how a diamond performs? Is one more important than another?
I am looking specifically at princess cuts.
 
In general, it is suggested to stay with very good or higher on polish and symmetry and thin, medium, or slightly thick on girdles.

Polish and symmetry are considered to be important details of finish for a well cut diamond. It is said that polish and symmetry of good and above look the same to the naked untrained eye, but some prefer at least very good to excellent or ideal ( according to how the lab grade their top polish and symmetry grades) as part of their overall package of their diamond.

Basically you want to avoid extremes with your girdle thickness. For example very thin to thick, also a very thin girdle needs evaluating by an expert especially with a Princess, to avoid durability issues, also an overly thick girdle can hide carat weight, and in some instances, a diamond may look a little smaller as a result of this.
