when installing a hanging or pedestal sink, do the pros apply anything to the sink prior to installation that fills the gap between the inside edge of the sink and the wall?

It all depends on the fit. Usually though, caulking is used. It's a fancy word for glue and different caulking is formulated for different uses. The "pros" buy theirs in the plumbing section of home improvement stores.
