Why do they taste so much better than the bottom?

I keep rereading your post to see if you are talking about the slang meaning of muffin top: "The roll of stomach fat that overflows out of the top of low-cut or too-tight jeans"

I'm guessing you didn't know that meaning . . . :lol: :lol: :lol:
 
The bottom is more condensed while the top gets to expand out making it fluffier. :praise:
 
and because the top expands both vertically and horizontally the surface area is increased which also, being surface, gets slightly caramelized, thus improving flavor. the portion in the cup has no surface in contact with the hot oven air, so has no caramelization and a higher moisture content.
 
Last night I ate half a bran muffin but ate the top half yesterday. This morning I got up and thought boo, now it is time to eat the bottom half (not as yummy). haha You are right the top is better! :bigsmile:

Davi, I think a lot of places sprinkle sugar on the top of their muffins, giving the tops that nice crispy, sweet taste that's lacking on the bottom. Personally, I prefer to nibble the edges of the muffin and leave the rest. I'm awful!
 
I break half the bottom off, and put it on top then eat it like a muffin "sandwich." I do that for cupcakes too, that's how this practice got started. My husband loves the idea, but still always laughs at me when I do... I'm glad I can keep him amused. ::)

I think it's because the direct heat of the oven tends to bring the butter and sugar together to create a moister, sticker, more delicious half. We actually had a place in Manhattan (Zaro's) when I was still working that sold just muffin tops. Just the tops were more expensive than buying the whole muffin! I never knew what they did with the bottoms.....

I believe I have seen a muffin top pan where it is a shallow muffin tin so you only bake the tops.

I've actually seen bakeries just selling muffin tops. Pretty great when you have a child who only eats the tops
 
Muffin tops are so popular now, crispy/browned tops are definitely yummier. That pan is perfect for hamburger buns......I'm hungry now :blackeye:
