Brussels sprouts are one of my favorite vegetables! I just had a big plate of them, roasted with garlic, salt, pepper and olive oil. Soooo good. I picked up a stalk from TJ's today. They only seem to have the stalks (so much more fresh) around Thanksgiving time. I just love them. DH never liked them, until he tried them roasted. Now, he loves them too!

What's your favorite veggie, and how do you prepare it?

I dont know if its my favorite but I really like them...I get frozen green beans, thaw them, and saute them in olive
oil with garlic salt and sliced almonds. Yummy!

spinach, though, and I could eat it three times a day for weeks on end quite happily. I wash and dry, and heat over a flame until just wilted. Mix in roasted garlic and chopped dried chilis, add salt, pepper, rosemary, and asafoetida...

FI, OTOH, hates both brussel sprouts and spinach, and complains that my cooking chilis make him sneeze. Since I'm generally trying not to cough up a lung from the fumes at the same time...

Broccoli for me! I looove broccoli and could easily eat a whole crown a day. I usually steam it, add a little butter and garlic salt and that''s it. Though I love adding it to mac & cheese (out of a box) or pasta with a homemade cheesy white sauce (which is basically the same thing).


I love all veggies though. I would choose veggies over fruit any day!


Oh, and do onions count? They''re not the same as other veggies, but I put a whole sweet onion in just about everything I make. Onions are awesome!

 
For winter veggies, it''s Brussels sprouts for me too! I love them roasted with olive oil and a sprinkling of sea salt. Yum, yum, yum! I haven''t tried them with garlic -- do you just mince the garlic and add it to the mix before you roast them? Yesterday I had dinner at a local restaurant that served the most delicious roasted Brussels sprouts, perfectly roasted to bring out the sweet nutty flavor. A local brewpub also serves deep-fried Brussels sprouts (lightly battered) as an appetizer. They''re not as good as roasted, but far better than most other bar food offerings!

For fall veggies it''s yellow corn and (a dish rather than a veggie) ratatouille, and sweet yellow or red peppers added to almost anything.

brussel sprouts. How long do you roast them for? Do you cut them in half??
 
Brussels sprouts are one of my favorite veggies, too! I also love corn on the cob and sugar snap peas. Mmmmm veggies!
 
DH loves brussel sprouts, he sautees them in a pan with EVOO, some galic and a bit of salt. I need to try them some day... I am not that adventurous when it comes to Veggies. The family loves steamed broccoli, which I then squeeze fresh lemon juice over. I also love asparagus. Again with a bit of fresh lemon juice.

His fave is Eggplant.
 
I love asparagus, but not overcooked, with a bit of real butter and a dash of salt. Yumm....and they have to be fresh or frozen, not the canned kind (are canned veges really veges anymore?...more like little vege corpses...sorry but, ick)

I''ve always liked veggies in general, but when I was a kid I would *only* eat canned green beans, not fresh. My mom would always buy fresh ones when they were in season and I''d try them, but I just didn''t like them. I don''t know what I was thinking! I find them really gross now.

Oh Kaleigh... I'm so glad you posted that! I thought I was the only nutso that pan-fried (aka sauteed) their brussels sprouts!

(the food-squeamish should quit reading here.)

My very secret guilty pleasure is sprouts pan-fried with thinly sliced red potatoes, in a little EVOO and butter. I slice the sprouts lengthwise and give them a head start in the pan, then add the potatoes. When the whole mess is tender and lightly browned, I sprinkle with sea salt and grated parmesan, and eat with a dollop of mayo (that's the Dutch in me).
 
speaking of brussels sprouts... i used to HATE them when i was little and would hide them under all my other food to try to get away without eating them.

but now i love them. turns out, i read that that most people overcook the brussel sprouts so as a result, most kids grow up disliking them since they are not cooked properly. apparently overcooked bs's get that BITTER taste that a lot of people associate them with...i know i definitely did.

but since growing up, i have had them properly done esp at restaurants, and they are SO good!!! i love them sauteed with bacon, olive oil, salt and pepper and a little butter and a dash of lemon juice. YUM. i think i might make them for thxgiving now.
 
Asparagus is my favorite green veggie, with haricots vert coming in at a close second.

As far as preparation goes, I like simple for asparagus- just brushed with a bit of EVOO and grilled. Haricots verts are so tender, that all they need is a bit of boiling and then tossed with herb butter.

I''m slowly warming up to brussels sprouts, and will be trying this recipe for our early Thanksgiving dinner with my parents tonite:

I hatessss the brussel sprouts! Brussel sprouts and lima beans are the things that I''d rather like... eat cat food than consume them.

Steamed asparagus is a big favorite of mine. I actually have a microwave steamer I use all the time for them, and then I dunk them in a mix of stone-ground type chunky mustard mixed with horseradish. Mmmmm. The cat likes them too but prefers them without the sauce.

Grilled corn is yummy in the summer but is almost... dessert like so I don''t know that it really counts

My husband usually just tosses them on the grill in their ears, and that works fine.

I love salad, with the nice bitter spring greens and all sorts of goodies like cherry tomatoes, mushrooms, maybe some avocado, and then fresh made vinaigrette. I use a roasted garlic rice wine vinegar mixed like 4 parts vinegar to 1 part olive oil, herbs de provence and salt & pepper. You can of course use more olive oil but DH & I love vinegar. That''s a full on meal with the avocado.

I am not NORMALLY a brussel sprout fan.. however we spent Thanksgiving with my daughter''s boyfriends family a couple of years ago and one of the dishes that was served is the following recipe.. IT IS DIVINE!!!

My husband went to the farmer''s market this morning and picked up brussel sprouts and asparagus, YUM! We roast ours as well. I used to love artichoke (best when served w/ melted blue cheese

I''m a big fan of soybeans (edamame!) and fried okra (BF got me started on that one).

Ok, that sounds delish. Hoping the preggo gets her brussel sprouts. I love a good rib eye...My fave for sure. Ok enough with the high jacking, and while am at it, glad you had a great baby shower.... Scooting off now... LOL!

VRBeauty, I coarsely chopped the garlic, then tossed around in the pan before roasting. I've pan-fried in the past, to start, then roasted in the oven. I think this is the first time I've made them with garlic.

Linda W, This is the recipe I used today, but I skipped the pecans. I cut most of the sprouts in half, but the smaller sprouts can go in whole. Next time, I think I will do half olive oil, half butter. That's how I made them the first time I roasted sprouts, except without the garlic. I also put them cut side down in the pan, and then tossed around at about 15-20 minutes in.

BTW, I'm so jealous of all you folks in CA. My nice Trader Joe's cashier today is originally from Salinas, CA, which she referred to as the Salad Bowl of America. I had never heard the expression before. I looked at the label on my sprouts when I got home, and see they are from Salinas! I'm just happy to have found them on the stalk. That's as fresh as they'll get here on the East Coast!

Rosemary and Asafetida. Wow, what an intriguing combination - I have to try it because I just can''t imagine how it would taste.
Most people I know turn their noses up at the mention of brussell sprouts. My best Brussell sprout taste experience was having them served with a light fennel flavoured gravy.

mummm is right! i love brussel sprouts! just this morning there was a recipe for brussel sprout casserole on GMA. it looked yummy!

I also love butternut and acorn squash!! Not sure if those are technically veggies though.

I love cauliflower! I never understand how people can dislike it, it''s so mild of a veggie! Roasted with pecans and butter and salt, YUM!!! And you can make a pretty presentation of it if you steam the heads intact then serve them on a nice platter for a holiday.

Well we didn''t even get to veggies last nite Kaleigh, I was too busy stuffing my face with mashed potato... I have been craving potato my entire pregnancy. And the rib-eyes were divine.

My 4 fave veggies are cauliflower, broccoli, carrots and asparagus.
 
Brussels Sprouts!!! Love them soooo much!

I cut them in half and sautee them with a little bit of butter (they get nice and brown), some olive oil, shallots, salt, pepper and minced garlic. I add some diced bacon, then right at the end squeeze some lemon juice over the top. Yummmmmmm.
 
I love brussel sprouts! We usually braise them in butter or EVOO--they are delicious!
 
Oh, me too, love Brussels Sprouts! I saute some chopped blackforest ham in garlic flavored olive oil (or omit the oil and use bacon instead!) then toss in halved sprouts with some salt and pepper. Simple and delicious!
 
Peas for me. I LOVE peas. I eat them for snack. Nothing better than peas with a little butter and salt. Mmmm.

DH just bough brussel sprouts at the store. I made a face when he put them in the cart, but he didn''t notice. I do not like brussel sprouts. Blech.
