My fav dish at my fav restaurant...I finally figured out how to make it! yummy!
I don''t like numbered measurements...I just go by sight
Ingredients: Pasta(pref penne, but rotini is good too)-baby spinach-pepper-oregano-garlic cloves (cut, minched, or powder)-olive oil-basalmic vineagrette.
Method:
-boil past till tender
-in pan, add oil, spinach, oregano, garlic...cook until spinach shrivels ( a few minutes)
-add cooked pasta to pan...cook altogether for a while, adding vineagar and more oil as needed...cook until pasta turns brown in some areas
Top with either fresh crumbled feta or parmesan cheese
