...you have piqued my interest and I am trying to learn about milling my own flour, and baking healthy bread from it. If you don't mind sharing, I have some questions. 
What mill do you use? What wheat berries do you use and why? (Hard I assume? Red, white, winter, spring?) There are so many recipes out there for bread, from quick breads (currently what I am making with AP flour), to the long-haul rise-and-punch recipes (what my dad used to make on a lazy Sunday). What recipe do you use?
I have started down a rabbit-hole of learning. I think I may soon enter analysis-paralysis which often leads me to lose direction, but I would love to see this through. Any help is appreciated!
