Cooking Herbs ? Spices ? what do you use in your kitchen ? chilis, sauces, condiments, garnishes all welcome!!

I love cooking so I have a huge amount of herbs and spices - my family has an aversion to bland food so everything here has something added to it. IMG_5251.jpeg

you might have more jars than I do; I just counted 48 bottles/jars for the ground up/dried/whole herbs/spices. I dehydrate the ones I grow; rosemary, oregano, basil, chives and if I purchase cilantro or parsley for a recipe, whatever I don't use (which usually is at least half the bunch) I dehydrate the rest--just did cilantro today). I usually make my own 'mix', chili (Texas style), Italian, ranch dressing herbs, etc.
 
why do i have 3 boxes of sage (i like sage) but no thyme ?????

i found a recepie this week that needs allspice so that's exciting
still looking to know what to do with sumac ?

now i dont know what's more annoying we just ran out of gas -ive been meaning to go outside and check the bottles (lucky Monday -my day off is delivery day for our suburb) or that my pepper grinder just wore out

Gary still has a sensitive tummy after the antibiotics which is a pain because i love onions and they are dirt cheap right now -cheaper than chips, even the red ones and i have about 3kg in their bowl ...
i have been using shallots which ive never used before just becuase they are a bit expensive and i have leak in the freezer

but i am always reading about onion weed
i have two patched in the back garden i usually pull out when they are flowering which is now -and i throw them away
anyone ever use onion weed -you may know it as onion grass

when i was a wee kid i along with many other kids would bring home a bunch of 'snow drops' for mum- they went straight in the bin
