You'll probably have to wade through hideous 70's and 80's stuff at the pawn shops. If you don't find something at a Canadian seller's website, I'd surely consider getting one of the two I posted or something similar.

You are going to Mexico--buy her something there. You might be able to max your budget & surprise her if she wants to choose something cute on her own & it will always be remembered as the ring to celebrate the place you met...and the placeholder. She'll understand.
