getting there! touch up cuts on stones with chips.

so, love this site. Every time I name drop it it seems to get the attention of sellers. After much research and insight from you folks I will in fact be getting a hand-tooled Victorian/Art Deco plat. ring with the design work matching my girl's tats.
The center stone is sourced from my grandmother circa 1930s. estimated F-G color, VS, and round cut by my guy making the setting, estimated .80 carat.
however, it has visible chips at 6 o' clock position as confirmed by the renowned David Atlas. would love to pass this on to my special woman and write our own story(with the setting) while celebrating my family with the stone.

It was recommended I get a touch up cut to fix the chips which I'm told is totally doable. Rather have a perfect smaller stone than a larger one with visible issues :( Quoted $250. Can anyone tell me their experiences with this process? I was hoping to have the stone insured during the work but Jewelers Mutual told me that they cannot write a policy for it and cutters told me that 99.9% the procedure is quite simple with new technology. Cutters also told me that shops don't insure this kind of work?!
seems like a car shop doing body work without insurance to protect both parties from mistakes.

any insight is welcome. seems so logical to spend under 300 bucks for a stone that will def. increase in quality and value after the work.
