DH and I bought a new BBQ grill this weekend to celebrate the 70 degree weather we had on Saturday. We christened it with hamburgers and grilled artichokes and zuchs. What are your favorite grill recipes-any, marinades, rubs, meat or sides are all welcome!
 
Mmm can I come over next time you grill?

I don''t BBQ as it''s my husband''s job. in South Africa they call it a "braai"

anyway, I like lamb chops. favorite sides are corn on the cob and baked potatos (we wrap them in foil) and DH puts the potatos into the coals or they won''t cook enough.

Pulled pork! A slow cooked pork shoulder is a thing of beauty. Actually, any bbq pork products are awesome. Ribs are always great.
 
Marinated portobello mushrooms with swiss cheese on top. YUM! I also loved grilled zucchini!

Also, beer can chicken is amazing. Recipe
 
HH - ditto beer can chicken! You gotta make it. Also pizza on the grill is amazing. Shishkabobs are probably my favorite. Best thing I ever learned was to coat the veggehs in olive oil first. They won''t burn and they taste amazing. I seriously grill year round. I keep Costco turkey burgers, salmon burgers etc in my freezer at all times. Nothing better than eating bbq in the depressing cold and darkness of winter!
 
Carolina rub:
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sugar
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon freshly ground black pepper
1/2 teaspoon salt

Works great on any kind of pork. Brush on your fave BBQ sauce during the last two minutes of cooking.
 

FI loves to bbq. If it were up to him we would bbq every weekend.


He usually makes:


Churrasco seasoned just with salt and will sometimes use a hickory log to cook. Delicious.


Chicken: honey bbq, bbq, jerk (my favorite!), cajun, and is experimenting with curry. It''s not working so far lol.


Burgers marinated in beer but have to ask him which one.


As an appetizer he makes jalapeño poppers:


Cut jalapeño in half, gut, soak in water. How long you leave in water depends on how hot you want it. If you leave in water for a long time (overnight, for example) the chances of having any hotness the next day is very low. He normally only soaks for 10 to 15 minutes. Some are hot, some are not.
Stuff with cream cheese
Strip of prosciutto or turkey bacon on top
Topped with a strip of provalone
Grill for 25 to 30 mins
Seriously delicious. It is the one thing everyone requests he makes when we are invited to parties and the first thing that is gone.
 
Flank steak with a soy/teriyaki marinade.

where is the drooling emotie when ya need it!? FI and I have a cookbook devoted entirely to ribs... cannot wait to get started on that thing!

After eating leftovers for dinner, I can honestly say that my favorite grilled veggie dish is grilled artichokes. SO GOOD!

Put a pot of water on the stove to boil

Trim two good sized artichokes and peel the stem (the stem tastes like the heart)

Cut in half lengthwise

Using a paring knife, remove the pith (fuzzy part), and the innermost leaves (remove enough to get all of the pith out).

Brush with lemon juice to prevent them from browning

Add 2 tbsp lemon juice and a healthy portion of salt to the boiling water and add in artichokes.

Boil/steam until the heart is tender to a knife point.

Drain halves and drizzle with olive oil and S+P to taste

Grill on a hot grill until grill marks are present

Serve with lemon butter, roasted garlic mayo or balsamic vinaigrette for dipping. YUMMY!
