Oh, and mashed potatoes, made with Yukon gold potatoes. I use skim milk instead of higher-fat milk or cream, but then I add butter and lots of parmesan cheese to the pot right before serving. Yum.
That's all I've got. I'll be checking out this thread often because I love potatoes but I have no creativity whatsoever.
