Difficult to upgrade stone in this setting?

I've just recently purchased a 1 carat diamond, and the appraiser made a side comment that really stuck out in my head: "Now is the time to upgrade the stone if you wanted to", in the sense that it's less work and less expensive to have decided on the stone before it gets mounted in the setting.

I spoke with my jeweler, and they said that changing the mounting on the Scott Kay setting I had chosen wouldn't be a problem if I decided to go bigger at a later date. Is this true? I'm inclined to think it's like getting major repair done on a car. Sure, the car may look the same, but it really isn't the same or doesn't quite "work" the same. Would I be jeopardizing the integrity/stability of the setting (not sure what the actual terms are for rings) by going from 1 carat to 1.2ish later on? If it really is no big deal to change the mounting, I'll wait until later to do it.

Here's a picture of the setting. I'm considering going from my current 1 ct to somewhere between 1.15 to 1.25.

Also, the website where I found this picture says this setting "was designed for a 1 carat stone". Does this mean then that I shouldn't go larger than a carat?

it should not be a big deal to put a new center setting in and reset all the stones.
The center would need to be higher though I expect
 
I think the right person to question about it is Scott Kay Co.

I am not sure why the appraiser remarked as he/she did....

I wouldn''t let anyone work on the ring to put a larger center in except Scott Kay.

If someone else alters it, you may "lose" the Scott Kay authentication of it.

That''s a good point, thanks I''ll email them about it. He made that comment because I mentioned I was teetering between this stone and a larger one of lower color.
