design advice - two oval blue topaz stones

I have a set of oval blue topaz earrings that were given to me by my late grandfather. I never wear the earrings and would like to have them reset into a ring. I have no idea whether I should design a two - stone ring (although I rarely see a pretty one) or what stone I could purchase to have in the center that would look nice with topaz (a diamond is presently out of budget since we just got married). The stones are about .7 carats each and I would really appreciate your design advice or any photos that come to mind!
