Custom 3 stone ring

In my quest to find the perfect 3 stone setting, my husband and I have realized that custom is probably the best route for us. So I was surprised when a vendor came back to me saying that they could work with my center stone, but not my sides. It just seems odd when if I asked for a solitaire ring, my stone could be used. Is this common? Can someone please explain why this would be?

You have all 3 stones but they dont want to use the sides? Some settings come with the sides stones already in them
but I would not call that custom. I would find another jeweler.
