Chicken Kapama recipe???

I normally make flatbread on Sundays. It's the only thing my babe likes in the morning with Nutella or peanut butter :nono:

Our recipe is very similar to the one posted, I'll try to post my recipe tomorrow if you wish.

There must be something in the air or the water, Skippy! I went grocery shopping for the ingredients for Greek chicken recipes today during the day. Only I couldn't decide between the two recipes for chicken kapama and natylad's other baked chicken recipe and I also decided against buying cinnamon sticks and whole cloves once I was in the store. The result is that I am likely to improvise a baked chicken kapama with potatoes and no cinnamon stick or cloves...of some type. I will report back once I make it. My daughter has two doctors' appointments tomorrow, so if I cannot make it tomorrow, I will have to make it Friday!

I hope to hear from you tomorrow!

I made the Chicken Kapama recipe last night. I used chicken stock and served it over orzo. I couldn't believe I actually had every ingredient in the house, including the whole cloves and cinnamon stick. Who knew?

It was quite tasty, but I think my technique needs a little tweaking. I'm going to serve the orzo on the side next time because it kind of diluted the sauce which tasted great in the pot, but had less ooomph when eaten with the orzo. I probably over-cloved it too because I figured the cloves were old and used extra but it turns out they still packed quite a punch. I'll do the second half of the cooking with the pot uncovered next time to let the sauce thicken and further intensify in flavor because it's really quite yummy. The recipe is definitely a keeper. Thank you!!
 
I'm going to try the Chicken Kapama recipe today - in the crock pot.
 
Ok, here is what I did. Browned the onion and garlic. I used boneless, skinless thighs - rubbed and browned them as directed with the salt/pepper/oregano mixture (used a little bit of butter when browning). Deglazed with a half a cup of white wine (I didn't use stock). Threw in the crock pot with the rest of the ingredients. I used a 26 oz can of peeled tomatoes (more liquid, so that's why I did't use any stock). I also used 6 oz tomato paste. I did add a little bit of lemon juice, along with a couple of peppercorns. I used 2 cinnamon sticks and 2 whole cloves, 1 bay leaf, and honey. I'm going to cook it on low for about 5 hours. It smells delicious!

Thank you, Skippy, for starting this thread. We should do a thread like this at least once a week. Can't wait to try the other recipes listed here.

I didn't use stock either and used 2 cans of tomatoes and some tomato paste and used brandy instead of wine.

I don't have cloves and by accident had it in my head I needed nutmeg. LOL :o It still tastes wonderful!!!

Okay, this might be a dumb question...
I have no cinnamon sticks. But I have cinnamon. Can I use that instead? And, if so, how much would be appropriate?

It's not a dumb question and I have not yet made chicken kapama even once, but I can answer you. Yes, you can use cinnamon. That is what I have decided to do after looking at the prices of cinnamon sticks and wondering if I would ever use a second one! Mama Flo's recipe calls for these spices:

1 tablespoon cinnamon
1 teaspoon allspice
1 teaspoon nutmeg
salt and pepper to taste

See above for a link to her recipe, which is an alternative to Ximena's.

Just finished eating dinner. OMG, you guys! It was sooooooo good. DH said it even tasted better than it smelled. Can't hardly wait for the leftovers tomorrow.

maybe one modification I would make is to use chicken with bones it! The restaurant does that and it is delicious! This recipe was incredibly delicious!!! :cheeky: :cheeky:

DEB, yay, thanks for letting me know the Nutmeg is okay. hehe I did throw in a dash of cinnamon too! Trader Joe's had cinnamon stick for $2 for about 6 of them so I used a stick too. Not sure if you have a TJ's out there?

As promised~I've been making mine on a griddle that covers two burners, so that is the method I'll share here.

Malakó Pso_mí
16 pitas

3 C All-Purpose flour
3 1/2 C Bread flour
3 C warm water
1 Tb + 1/2 ts instant yeast
1 1/2 Tb honey
1 Tb salt
3 Tb plain yogurt
1/4 C light olive oil


-In the bowl of the Kitchen Aid mixer fitted with the dough hook, combine 5 C of flour and the rest of ingredients.
-Mix on low speed for 2 minutes or until you have a smooth batter.
-Start adding the rest of the flour in small increments making sure that it all gets absorbed before adding more flour.
- After 'kneading' for 4 minutes, dough should clean the sides of the bowl and should be soft, smooth and little sticky to the touch.
-Remove the bowl from the machine.
-Lift and press dough down to form a ball. Drizzle a few drops of oil over the ball, roll a couple times to coat dough on all sides.
-Cover and set aside to rise until it has doubled in size, approximately 1 1/2 hours.
-Gently deflate the dough and divide in half. Divide each half into 8 pieces.
-Roll each piece into a ball, cover with a damp kitchen towel and rest for 20-30 minutes.
-Preheat a griddle or a non-stick skillet over medium-high heat.
-On a lightly floured surface, flatten a dough ball into a disk. Roll the disk into circle approximately 6-7'' in diameter and less than 1/4 inch thick.
-Lay a rolled-out pita on the griddle and bake for 30 seconds or until you see bubbles starting to form, then turn with a spatula and continue baking for 1 minute or until big bubbles appear. Turn the pita again and cook another minute. Pita should start to puff up during this time; if it doesn't, try gently pressing the largest bubble of the pita to force steam into the rest of the bread.
-Transfer hot bread to a cooling rack or a tea towel lined basket.
-Store cooled bread in plastic gallon size bags to keep them soft and pliable for days.

-Hand method: Combine 5 C of flour and the rest of the ingredients in a large bowl. Mix with a wooden spoon until you obtain a smooth batter. Start adding the rest of the flour a little at a time. When the dough is too stiff to stir, turn it out onto a lightly floured surface and knead for 8-10 minutes or until smooth and elastic. Return the dough to the bowl, drizzle a bit oil, turn a couple times to coat and cover to rise.

-Risen dough can be kept refrigerated up to 4 days.
-No Puff: Not enough heat on the griddle or too much flour but still delicious.
-Flour amounts will vary depending on weather, I used 7 1/4 C just last week.

I made that recipe last Tuesday and my husband was in heaven--says he would be thrilled if I made that once a month. I deglazed with some greek white white, served it on orzo and made some slow simmer green beans with tomatoes from another site. Delicious Ximena!

I had some Greek cookies in a Christmas tray that were fantastic-- they were rounded, super crumbly but not overly dry, covered in powered sugar, and made with quite a bit of ground nuts. Any recipes? :naughty:
