Buying a 3 carat diamond- color and dimensions ok?

I've decided to buy a 3 carat round diamond and have two questions
1) Will an 'I' color grade appear colorless from a face-up view or will contain visibly more color than a G or H? I am thinking about sticking to an I grade for cost reasons but could go up to a G or H and trade on size if necessary. I am not color sensitive but am wondering if others will be able to see the color difference and know that it's a lower color grade (as compared to the DEFGH range)

2) Would you modify/narrow the dimensions below in any way? I am looking only for super ideal cut diamonds- this is the most important factor for me.
Depth percentage: 60-62%
Table percentage 54-57%
Pavilion angle: 40.6-41 degrees- *I have read other PS threads that say 40.6-40.9 is ideal- should I narrow this range?
Crown angle: 34 degrees- 35 degrees

Many here have purchased I colored diamonds and been very happy with them. You would notice some difference side by side with higher colored stones but on their own I don't think anyone would look and see a yellowish looking stone. Have you been able to see any ideal cut stones in an I color grade? That would be your best bet in determining your color sensitivity but for the most part, I doubt that you would be disappointed. I would definitely narrow the pavilion angle to 40.9. Even the HCA dings stones that are 41 degrees and above.
 
What are you planning for a setting? A solitaire with basket allows a lot more freedom with color vs a Tiffany six prong or halo. Also, metal choice too (yellow gold and J color is common pairing)
 
I would personally stick with a max of 40.9 and I'd want the crown angle very close to 34.5 to maybe 34.9. The only time 41 can work well is when the crown angle is a 34, and I like a higher rather than lower crown angle.

Many people here with 3 ct and larger stones have chosen I color because it still faces up quite white while being a good value. My suggestion is to take a look at the diamond you choose before you have it set so you can see it in all your lighting environments. My diamond (I color) looks worst in my car as the light comes in through tinted glass and makes my stone take on that tint! But in natural light, it looks quite white.
 
When I was shopping for my upgrade, I was also looking at stone 3ct+. I looked at many options (both AGS and GIA graded, a couple of super ideals as well) and all the I colored stones really bothered me because I could see tint easily. I found that my minimum threshold in a MRB was an H color. I suggest looking at several stones to see what you find tolerable. Many people here have large I color stones and are very happy with them!
 
41 degree pavilion with a crown of 34 to 34.5 55-56 table when well cut is one of my favorite combos.

I am thinking of a Tiffany six prong platinum setting. Will the I color look a lot more obvious/glaring in this case?
 
I wouldn't call it glaring, but it will be more noticeable since you'll be able to see the diamond from the side. I personally would still be comfortable with an I color in this setting, but I know many others who wouldn't go below H
