Sunday I made a breakfast quesedilla though! eggs, mexican cheese, sour cream, and salsa
Totally unhealthy and totally worth it lol

scrambled with a wedge of laughing cow light swiss cheese mixed in. It doesn''t melt very well, but you get little chunks of cheesy goodness with your egg.

I love them poached over english muffins. YUM!

But I also love a good omelet and a good fried egg over medium.

And to think I wasn''t that big a fan of eggs 5 years ago.

However, my dinner eggs are best over easy or sunny side up with buttered toast! I''m also a big fan of the hard boiled egg. MMMM egg salad.....almost lunch time!

My older son eats them scrambled.

My younger son announced to me the other day that he''s not going to eat eggs anymore. He asked me why people eat eggs when they''re going to turn into baby chickens!

Haven - have you tried extra virgin unrefined coconut oil? It''s really healthy and tastes yummy (if you like the taste of coconut - my older son loves it, but younger doesn''t). It''s provides a healthy fat that we all need.
