Does a diamond "sparkle" as much with a bezel setting as it does with a prong?

Only if the diamond is well cut.
 
a well cut diamond will.

a steep/deep diamond requires light coming in from the pavilion windows to maintain the illusion of brightness.

Ditto, if the stone is well cut almost all of the sparkle should come out of the top of the stone and thus a bezel wouldn''t matter.

I agree with what everyone is saying-- it really depends on the diamond. What cut is your diamond?
Just as a word of warning, it really can make a huge difference.. I have a deepish cushion cut that was put into a bezel-- it looked like a different stone. It completely lost it''s whiteness and brilliance. (and I was really bummed because I ADORE bezels!!!)
On the other hand, some stones really shine in bezels!
