Belgium and Amsterdam must do's?

DH and I are off to Amsterdam and Belgium on Wednesday. If anyone has suggestions on must do's and see, please share. I'm particularly interested in restaurants where the locals eat. We'll be staying in Bruges & Brussels with side trips to Ghent to Antwerp. We've been to Amsterdam before for a quick visit and have our itinerary for that city pretty much nailed down. Thanks in advance for any tips.
