I love beets. I'll eat them anyway I can. Pickled, steamed, raw, boiled, LOVE them :love:

I like them when they're freshly plucked from the ground. The ones bought in grocery stores don't compare in sweetness. From my yard is the best, but Weiser Farms (if you go to farmers' markets in LA!) grow very good ones.

Mmmmm cauliflower... I love me some of that too! But my first love is broccoli! You eat the cauliflower and I eat the broccoli and we are a match made in heaven.
 
I love beets - some more than others.

I love the ones that are really sweet... but I grew up with run-of-the-mill beets, and grew to like them even before I knew about the very sweet ones, so I'm pretty ecumenical when it comes to beets.

My mother prepared beets by cooking them and then grating them coarsely. These were served warm with boiled potatoes, fried bacon, and the hot bacon drippings. I always mashed the potatoes and beets together on my plate and topped it with the hot drippings... I know it that probably sounds very strange to anyone not raised in Europe, but... :lickout: .

These days I tend cube the cooked beets and use them cold, as (or in) a salad. A friend also makes a roasted beet pesto - you eat it as a dip with pita chips - that's to die for!

I juice them! It's pretty much the only way I eat lots of veggies. I juice them with carrots oranges and ginger. Or spinach and apples to me they taste like sweet dirt. Not exactly appealing but that's why I just chug it down!
 
I haven't had them since I was a kid, but I want to try them roasted. I pretty much love any vegetable roasted with a drizzle of garlic olive oil and maybe a sprinkle of freshly grated romano cheese at the very end. Yum.

We should do a thread on favorite vegetable dishes and how to cook them! :lickout: :naughty:
 
I actually really like golden beets roasted with other root vegetables and butter, with a sprinkling of herbs.
 
I had beets on a salad on California pizza Kitchen but never raw. What do they taste like raw? radish?
 
I love them roasted, then cooled, peeled, and sliced on top of a big bowl of salad greens with goat cheese, candied walnuts, and a lemon-honey-mustard vinaigrette. :lickout: I'm particularly fond of the golden ones.

This. Beets are vile and I despise them and they should be eradicated from the planet. No - from the galaxy (just in case they exist elsewhere in the universe). They are followed very closely by olives, in my book. Olives are revolting, but olive oil is a delight, so I'll allow them to remain on earth for that reason alone. Olives receive a pardon. But beets... :nono:
 
beets are way too sweet for me....but my hubby loves them.
a little on a salad is ok. for him its the whole salad should be sliced beets!

hate them! Beets, lima beans, and parsnips are pretty much the only veggies I don't like and beets are my least favorite of all! I think they taste like dirt :knockout:
 
*LOVE* beets. I feel a little sad for beets.They're such an unappreciated vegetable. Roasting them is DELICIOUS, just wrap in foil like you do a potato. When they come out of the oven (and cool down), the skins just slip off. I eat them roasted as is, or I'll grate them and make cold beet soup (prevalent in eastern European/Slavic cultures) with buttermilk + dill. Beets + goat cheese = :lickout:

Regular vegetable I hate? Celery and Swiss Chard! Vile stuff. Each passing day I hate it more and more.
 
We managed to get little baby beets a few times in the garden and all of them got pickled.
My mom's with Bella; she thinks beets taste like dirt.

We love beets. Beets do not have to be roasted but they are much tastier that way with a nice vinaigrette and a bit of cheese.
I only buy small-medium with leaves attached as larger ones tend to taste 'dirty' to me. Leaves are great in stir fries, smoothies and pasta.
Mother still pickles beets, not my favorite but she kills me with her fried or oven 'fried' beets [all colors] with Tzatziki sauce!!! :cheeky: Good.

Pa-too-eee indeed! Okra is DISGUSTING. Slimy. No taste. Makes me want to barf on the table. Beets, lima beans, okra, ginger -- yes, should all be eradicated from existence.

Other veggies are good. I love brussels sprouts too -- eat them cold with mayo for lunch or snack, yummm. I also love kale -- can't sell it to DH, so when he goes out of town, I cook me some kale in a tiny bit of bacon grease for dinner. Heaven!
 
Davi and YT: I grow beets and broccoli in my garden (along with other stuff like tomatoes, Padron peppers - yum, herbs, corn, leeks, shallots, and more that I can't remember) and you are welcome any time to come on over and pick and eat! I love growing beets because I pick them when they are really little and tender and I roast them - or boil them - and eat them in salad or plain with vinaigrette. I eat their tender greens in sautes. Yum. I used to grow cauliflower, but I got tired of fighting over them with the bugs, so now its just broccoli and Romanesco (I think that's what its called - the big spirally yellowish green thing).

Sometimes, I can make a meal just from the garden, like a big salad with fresh peas, radishes and beets, and thinly sliced red onion. Yum. Now, if someone else would just pick them, wash them and cook them for me, I'd be in heaven. Any takers? :bigsmile:

I've tried this and love it! Actually, it was this dish as well as another winter salad with beets, kale, and raisins in it that prompted me to grow beets in my garden this year! So far, my beets aren't quite ready to harvest, but I've already sauteed the greens twice and served them over lasagna "ribbons." Mmmmm, excellent.

Thanks, I never realized you could use the greens as well as the root! I just used fresh minced garlic, some chopped red onion, EVOO, salt, pepper, and the second time a little white wine vinegar and lemon juice for a little extra acidity. It's a quick recipe once you get the greens washed and blanched.
 
I like beets I prefer them fresh from the garden..hubby boils them and then we add some butter...now my mother in law makes pickled beets, those are pretty darn yummy

I wonder if Alton Brown (who's a southern boy) has done a show on okra. I'd love to know what's in it that makes it so slippery/slimy when boiled. I swear you could use that stuff as a substitute for motor oil. I'm with you on lima beans and butter beans too.
 
I went to Super Walmart today and found some beets by accident. I am going to cook them today and see if I like them any better than I did as a kid....
