Does anyone have a good recipe for banana bread? Looking for something tasty, not necessarily lowfat. I have all these overripe bananas that need to be used!

Off to dig it up.

This is from the Lady and Son's (Chef Paula Deen)

Yields 1 loaf

1/2 cup (1 stick) butter @ room temp
1 cup sugar
1/2 teaspoon salt
2 eggs
1 teaspoon vanilla extract
1 1/2 cup all purpose flour, sifted (I don't sift)
1 teaspoon baking soda
1 teaspoon banking powder
3 ripe bananas, mashed

Preheat the oven to 350 degrees. Grease a 9x5 inch loaf pan. In a mixing bowl, combine the butter and sugar; mix well. Add the salt, egg, vanilla, flour baking soda, baking powder and bananas, and mix well. (If you like cinnamon; I throw a pinch in). Pour the batter into the prepared pan and bake for 50 mins (I do the tootpick test; if it comes out clean then it is done).

YES!!!!

My boss, a self-proclaimed banana bread EXPERT, has publicly announced mine as the best banana bread he has EVER eaten. It''s AWESOME and come out perfect every time. Bear in mind this recipe makes 4 loaves, so adjust accordingly.

It''s banana sour cream bread and here''s the recipe (just something I got off google one day):

INGREDIENTS

* 1/4 cup white sugar
* 1 teaspoon ground cinnamon
* 3/4 cup butter
* 3 cups white sugar
* 3 eggs
* 6 very ripe bananas, mashed
* 1 (16 ounce) container sour cream
* 2 teaspoons vanilla extract
* 2 teaspoons ground cinnamon
* 1/2 teaspoon salt
* 3 teaspoons baking soda
* 4 1/2 cups all-purpose flour
* 1 cup chopped walnuts (optional)

DIRECTIONS

1. Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture.
2. In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans.
3. Bake for 1 hour, until a toothpick inserted in center comes out clean.
 
i''ve tried a bunch of recipes in the past, they are mostly variations of the same thing like the ones posted here. base ingredients then you can add in or subtract your ''tastes'' other than banana.

if you DO want healthier, sub applesauce for oil (you can even do cinnamon applesauce) and/or butter or do a blend. i also do a splenda/sugar blend.

you can also toss in mini chocolate morsels or chopped nuts or both! yum!

ericad''s will be excellent! It''s very similar to the one I use; I get requests for it! I think it''s the sour cream, I use it in several recipes and it always comes out yummy!

Not baking a banana bread and then making it into a bread pudding, but a bread pudding with bananas in it?

Would it be a bread pudding, that I would just mash some bananas into???

I would just mash some '' nanas then stir into it as you say, that should give it that overall flavour!

eva i found a great banana bread pudding with chocolate chips online...i think rachel ray is the one that had it. it was on Yahoo! foods i think. you might want to search. basically like making a bread pudding but then put slices of bananas into it and chocolate pieces or chips. the picture looked ABSOLUTELY divine and she made them in cupcake pans so that they were mini individual bread puddings, perfect for serving or portion control!! and the nutritionals weren''t even that bad...surprisingly enough! i def want to try that one this winter.
 
Thanks Mara, I found RR''s recipe. I love the individual cups. Maybe that will help with overpicking....

Definately going to give it a try.

That sounds awesome! I love bread pudding, and although I''ve never made it, it doesn''t sound too hard. I''ll have to look up the recipe and try it out sometime.
