What should I expect from two diamonds with the same pavilion and crown angles 35 and 40.8 one with a depth of 61% and the other with a depth of 62.3%? Will it be an obvious difference?

If its same carat weight, the one with 62.3 will looks smaller than 61.

Could be more than the size difference because that combo is at the edge one might be under and one over.
Need more info to really tell you anything including images.
In simple terms it depends on what is in those averages and what the rest of the numbers are.

@Jonathan Carter, I recently purchased a diamond with a depth of 61.8 and the same crown & pavilion angles as what you’re asking about. HCA is 1.4. Many people on here said this combo can go either way. I think my diamond looks great, and has a lot of fire and brilliance, but I’m not an expert and don’t have anything else to really compare it to.

Are you able to provide the ideal scope of these diamonds for the experts to look at? Good luck!

The difference is in the girdle thickness. In fact the stone with the thicker girdle is less likely to be close to the HCA 2.0 border (GIA rounding is an issue here) than the deeper stone.
Both should be safe though.

out of curiosity,
what effect does the star length % and lower half % play it the two stones?

GIA round that data to 5% steps - there is about 1% difference between them.
