I made lasagna. First layer: turkey, pancetta, onions, garlic & mushroom; second layer: ricotta, spinach & asiago cheese. Made a bechamel sauce and added marsala wine and mascarpone; topped with lots of sauce, mozzarella & asiago. Yum.
Holy lasagna that looks amazing, Matata. I cannot make a successful lasagna. I've tried, and it always ends up falling apart. Now I just make baked ziti, instead.
As for us, we're going easy tonight. DH is roasting a chicken right now. He chopped up all sorts of yummy veggies and laid the chicken on them, and rubbed a bunch of fresh herbed butter all over the bird, too. It smells amazing. My contribution is going to be a tray of roasted cauliflower (my favorite vegetable ever), and mashed potatoes. I'm enjoying a glass of wine at the moment, the chicken just went in so I'm wasting some time before I'm needed in the kitchen. I love it when DH cooks.
