Ok, so you don''t think of "Slovak" when you think of popular cuisine. Who does? On the other hand, Slovak cooks can be truly *wonderful*. This recipe is from my grandmother''s cookbook. (One can still buy it on ebay!) I have to confess I have never actually made this cake, but when my husband and I saw it we felt it was the quintessential Slovak recipe. Just look at those ingredients!
Almond Cake
14 eggs, separated
1 pound powdered sugar
1/2 cup bread crumbs
1 pound almonds, ground
Beat yolks with sugar until smooth and thick. Add bread crumbs and almonds. Fold in gently stiffly beaten egg whites. Bake for 1 hour in 275-F oven.
Butter Icing
3 egg yolks
1/2 box powdered sugar
1/2 pound butter
Juice of 1 orange
Cream until light and fluffy.
