Refried beans recipe anyone?

The kind you would find in a mexican restaurant please? I would be forever grateful if you would share, cant seem to find a good one anywhere. Thanks in advance!
 
You''ve probably already looked, but here are the best rated refried bean recipes on Allrecipes.com.

I can''t remember my login to the Cook''s website, if I can get in I''ll look there. Cook''s Illustrated always has the best recipes.
 
I have my own recipe I have been refining for years.
I use olive oil instead of lard . . .

Kenny’s Killer Refried Beans

Examine 4 cups dried pinto beans for little rocks or pebbles
Rinse in water - then pour that water into garden - nyuck nyuck nyuck
Put beans into very large glass bowl
Add:
3 quarts water
3 bay leaves
Cover
Soak overnight

Discard bay leaves and water but measure it.
Rinse beans.
Add amount of fresh water that you just discarded.

(Reportedly the discarded water contains the ingredient in beans that makes you toot.)

Pour beans, and fresh water into a very large deep heavy pot
DO NOT ADD SALT YET
Bring to boil
Reduce heat to simmer
Do not cover

Add
2 new bay leaves
6 chopped cloves of garlic (I used the frozen cubes of real garlic)
1 Tbspn ground black pepper
1 Tbspn ground Coriander
2 Tbspn ground Cumin
2 Tbspn Chili Powder
1 15-ounce can of tomato sauce or finely chopped fresh tomatoes
½ cup extra virgin olive oil

Simmer uncovered, stirring often, about 1 hour or till done
After about 30 minutes of cooking begin mashing beans with a potato masher or against the side of pan with large slotted spoon
Stir often, especially the last 15 minutes because beans will stick to bottom of pan

In cast iron pot fry one finely-chopped large brown onion in olive oil
When onion looks transparent add 1 Tbspn brown sugar
Simmer on medium heat till onions are burnt and caramelized

10 minutes before beans are done add the onion mixture
Beans are done when water is gone and beans have mostly dissolved

Turn off heat
Add 1 Tbspn salt, or to taste
¼ cup lemon juice
Remove the 2 bay leaves

Spoon and spread onto flat corn tostada shells
Put grated cheddar cheese directly onto beans so it melts a little.
Garnish with:
Shredded romaine lettuce
Thinly sliced green onions
Chopped cherry tomatoes

Kenny- you are awesome!! Thats an awesome looking recipe and i love that you dont use lard. My beans are in the stockpot currently, I will let you know how they turn out. Thank you for such a thorough recipe.

I just happen to have the recipe handy on my hard drive.
I don''t cook much but make killer lentil soup and cheesecake.

I love refried pinto beans.
They have a humble image but I value them as a very healthy, delcicious and inexpensive form of protein.

Plus they are green for the planet compared to eating animal protein. (no I''m not a vegetarian)
 
Well I''m really excited to try it. We''re big bean eaters in the Haven house, so I''m always on the lookout for good bean recipes. AND, DH just asked me if I''d make pinto beans more often, how serendipitous.

I usually stick with black beans and rice, so I''m sure DH will like the change.

It's much better if you use fresh tomatoes and garlic but more hassle.

Suggestion:
Start the broiler.

Make your own tosdada shells from corn tortillas in a cast iron skillet with olive oil.
Cook at medium-low heat, turning often till hard.

Spread beans to the edge.
Add some meat or shredded chicken if you want.
Then cheese to cover entire area.
Put them, still on the cast iron skillet into the broiler, but not too close to melt and slightly burn the cheese.
This takes from 1 to 7 minutes depending on your broiler and the distance.
Watch closely, the perfect time has a 1 minute window.

Remove and place onto rack or the stove burner grates to cool - you want air to get underneath so the stay crunchy.

Add chopped green onions, lettuce, toms and fresh cilantro, hot sauce if you like.
Spray with a fresh lime juice.
Eat and prepare to die of mouth orgasm.

get the beans and boil them with an onion and a carrot (no salt) until they''re soft.... cut uncooked bacon into little cubes (1/2 pound - or full pound depending how much beans you make) and when the bacon is crispy remove the bacon and fry the beans in the bacon fat (all of it) until it is mush - add bean water as needed to keep the right consistency.

This is how my mother in law makes it - she''s mexican. It rocks. Don''t need to add salt, get it from the bacon. You can either add the bacon, sprinkle it on top, or save it for quiche.

not healthy but neither are carnitas done traditionally lol I think traditionally the beans are fried in pork fat but the bacon adds a nice smokiness/saltiness.

This is how my family makes it too. Sometimes they do a ham hock instead of the bacon but I think I like the bacon best.
