Not the same situation, but I have a ring that was given to me when I was 5 when my grandfather died that has two stones from my grandma's wedding ring in it as a way to remember their relationship and know how important it was. At the time, I couldn't appreciate it (heck, I don't even remember getting it!) but now I love it. My ex had it resized to fit me, and I wear it sometimes and really cherish it. I think there are pictures around here somewhere - it's two itty bitty diamonds (1 pointers, most likely) in an infinity symbol.
I think if you had some kind of commitment ring made to give her at the wedding (or not even give it to her then, but to make one then to give her later) it would be really special to her later on - but since she won't appreciate it until MUCH later on, I'd also give her something that's fun *now*. A toy, a special one-day "mini-moon" to a theme park/zoo/whatever - something to commemorate the day in a way that's fun and special to her now. The sentimental value of the jewelry will come later, but I *do* think it'd be a lovely gesture. (Actually, I know winelover23 isn't around much anymore, but I'll show her this thread - her daughter was 4 when she married her DH, and I know he gave her some sort of jewelry to symbolize that they're a family now, but I can't remember what.)
At any rate, I think it's incredibly touching that you're thinking this far ahead, and you're going to make a FAB husband and step dad!
ETA: Okay, she's on vacation, but my friend reminded me that WL's DH gave her daughter a bracelet with her name on it.
