For cheese lovers...favorite cheese? and what do you eat with it?

Hi PSers,

The junk food thread made me think of my real weakness. What is your favorite cheese or cheeses? And what do you eat it with? Or wine lovers, what wine do you pair with it?

I love sheep's milk cheeses and English cheddars.
Absolute favorite Cheese in the world:
Abbaye de Belloc - it's a very refined and richer version of the petit basque.
French Pyrenees, traditional farmhouse, semi-hard cheese from the Pays Basque region, made from unpasteurized sheep milk, with a fat content of 60%. And when I can't find this, I will settle for Petit Basque.

Or the Lambchopper sheeps milk as well, which is available at Cow Girl Creamery.

Dubliner Cheddar

I love it with mini Panzanella whole wheat crackers.

My daughter loves all of the above, and English Stilton with apples.
 
Real aged parmigiano reggiano
A good grana padano (if I can't find real parmigiano reggiano around)
Stilton
Gorgonzola
Really aged vintage cheddar (of which we have a few here in Australia)
King Island Roaring Forties Blue

I don't really do subtle in my favourite cheeses. My wife has to air our house out if I buy anything with blue veins in it. Might explain why I also like stinky tofu as well then...
 
I only eat yellow cheddar cheese.
 
Triple brie with some chopped cabana, type of cracker they go on is irrelevant!!
 
Gorgonzola, in a salad with crispy, thin bacon, pine nuts and pear halves lightly fried in the bacon pan.

Or lightly fried halloumi coated in zaatar.

Or really strong cheddar with crusty bread and salted butter.

Bit of a cheese fan, me!
 
I discovered this cheese recently called Eagles Nest. Really good and ages amazingly well in the fridge.

Best cheese I ever had was recently in Brooklyn, extra sharp cheddar that came from a farm in Canada. It was so good. Ate it with crackers and a Pink Lady Apple.:lickout:
 
I'm so plain. I like old cheddar and goat cheese. I've had cheese from all over the world, but those are the only 2 I must have. As I have to avoid crackers in general (sigh!!!), i use apple slices.
 
I love cheese of really all kinds, but two come to mind.

Trader Joe's has this amazing blueberry vanilla goat cheese. I eat it on crackers or sometimes by itself. It's a party favorite. My other favorite is Sao Jorge cheese, which is a Portuguese cheese that is delightful with bread and butter. I'm Portuguese so I grew up with it in my house all the time - still not sick of it!
 
I love all kinds of cheese hard and soft, sheep's, goat's, cow's milk. I'll even eat american cheese. If really pressed, I'd probably put brie and fresh mozzarella on top of my list and eat them with veggies like carrots and tomatoes.
 
I love all cheese lol. Probably once a month when we don't feel like cooking H and I have charcuterie/cheese for dinner lol.
My favourite cheese is a really old cheddar. I love the sharp bite. I also like anything smoked. Smoked gruyere is YUM.
 
Cheese, I love it!!!! With crispy crunchy fresh apple slices, crusty french bread/baguette, crackers, anything really.

I'm going to try the cheeses listed by posters above!

Calcium: My mom's internist used to hassle her for her cheese consumption (Don't know why, her cholesterol and BP always fine). She paid no mind. So now she's 87 and she stands straight and tall, no bone density issues.
 
Cheese lover here. I love a good gorgonzola, sharp cheddar, and feta on just about anything. I just made lobster mac and cheese last night. With langostino of course because lobster here is RIDICULOUS. I used sharp cheddar and Gruyere.

Oh, wow, if I started eating this, I'd never stop. So impressed that you have the willpower to make it and eat it without gorging yourself. :cheeky:
 
I'm boring, my favourite is a good strong mature farmhouse cheddar. I'll eat it on it's own, in a sandwich, melted on toast, in cheese sauces, just love the taste of it. I'm not a fan of soft or stinky cheeses I'm afraid :lol:

:lol: It is soooo rich that you really cannot eat a lot of it in one sitting. I really should not make it because I surely don't need it, but dang once in awhile you just have to. Its like cheesecake - you just gotta do it.
 
Redwood: you might not be able to, but my stomach has the most amazing ability to expand for really good things!

So. I'll play: one of my favorites is D'affinois with herbs. So good smeared on pain levain. Must. Stop. Thinking About it...
 
Mm the last get-together I had I bought some gorgonzola (that people raved about), smoked gouda. And then someone brought another cheese plate of both soft and hard local goat cheese. the main thing is to let some of these get to room temp so they are like butter. I think there was 3 days this week I ate cheese and crackers (and some raw vegs) for dinner.
 
I am on The Atkins Diet (as I have said in other threads). I have found that it isn't really efficient (conducive to weight loss) to eat tons and tons and tons of cheese, but I still manage to eat a huge amount of it. I love so many cheeses that I will not attempt to list them here, although I paid *keen* attention to everyone's list and nodded approvingly at his choices. (You all know your cheeses! You made me drool.)

My favorite, however, is white Stilton with apricots. I have been eating too much of it, especially since apricots are not even Atkins compliant!

I get mine at Balducci's. My town has a branch of it (as many Connecticut towns seem to). I believe that the original store was a New York specialty store/gourmet delicatessen and still is the largest of the chain of stores. I am not an expert on the store's history, however! I just assumed that the cheese was available everywhere.

Cambozola is a big favorite of mine. It's like Brie with a blue cheese vein running through it.

I also love that blueberry goat cheese from (anywhere!!!) omg...the best!

A good, extremely sharp cheddar is always good.
 
Gotta have a good parmesano reggiano. Love it grated over a salad.
I also love a nice Jarlsberg, with crackers.

Whatever is on the cheese cart at The Ledbury, although I dance a little jig inside when they have a Stilton.

8 to 12 year cheddar preferably white.
I find the yellow dye bugs me sometimes.
Its good on anything, a small amount mixed with extra-sharp mass market cheddar makes for an awesome mac n cheese.
 
I love cheese. I like to eat it with fresh fruit, crackers and wine. My favorites are swiss, cheddar, gouda and colby jack. I guess just usual stuff. Brie is great warm out of the oven with strawberries.

If you like this you will love abbeye de belloc. Ask if WF carries it. Also sheeps milk and made in France like petite Basque.
