I never set up the mail program for my e-mail before. What exactly is the "oncoming mail server"?
 
Do you have a mac mail address? If not, I think that would be the server of whatever mail program you are using, ie hotmail, gmail, aol etc. They usually have an address that you type in to these boxes.
 
Do you mean incoming mail server or outgoing mail server? Sometimes an email provider will actually have two servers addresses - one that handles delivering mail to you (incoming) and one that handles sending messages from you to others (outgoing). These can have different addresses.

For example, to set up my iphone to check my gmail account, the incoming mail server is: imap.gmail.com but the outgoing mail server is: smtp.gmail.com

This is generic not mac-specific. You need to figure out the server addresses for your email provider.
 
I have a hotmail account. It is asking for the incoming mail server. Maybe the next page will ask for the outgoing?

Have you tried looking at your hotmail account help for settings for configuring IMAP access? I''ve never set up hotmail but with gmail I was able to find the servers that way.
 
I ended up calling tech support to set up my email after I switched to a Mac -- the server that my email had been using wasn''t secure enough for the Apple, so they walked me through the steps needed to switch my account to another server. I''m not 100% certain, but I think I called Apple tech support rather than my e-mail provider''s tech support. Anyhow, you might want to give that a try.
