Cooking when it is hot

We don't have AC and I want to make a corned beef brisket.

A huge pot of water boiling for four hours on the stone would make the house even more hot and humid.

So, I bought a crock pot today and will cook the brisket in the garage overnight.
Directions say to slow cook it for 8 to 12 hours.

I just can't imagine turning on the oven.

Do you guys BBQ or cook outside when it is hot?
 
Yes, we barbecue; my husband is the best cook so he does newspaper mustard steak (for special occassions), grilled chicken or shrimp on the barbie (more often). I like to use the microwave too. Mmmm, brisket sounds delicious!!! When is dinner?

It''s all about the BBQ and if you have to use the stove/oven, late dinners after the sun has set.
 
I barbecue year round, but more in the summer. With a little practice and know how, you can make a whole meal on the grill, including dessert. Next up is a professional quality smoker (I hope). My company sells some and we have a demo unit I can use pretty much any time, it is just a pain to haul it to where it is needed and then take it back.

I wonder if a propane turkey cooker would be able to do a good corned beef.

The grill is used a lot in the summer, we do just about everything on it, love love grilled veges, chicken, steak, etc... My fave is grilled tomatoes that are sprinkled with some parmesian cheese on top..

I will boil water for sweet corn on the cob, I don''t know how to grill that yet....

I just throw corn on the cob into the microwave for a few minutes.
I don''t even shuck it.

Works great.

I When it's really hot, I use the microwave or wait until late to cook. I also try to prepare enough for more than one meal.

BTW, slow cooker in the garage -- genius!

I guess Dinner is at 6 AM tomorrow morning since it started at 7 PM. Hahaha.

Actually I'll just cut it up and make about 10 lunches with brown rice and veges.
Then put in tupperware containers and freeze it.

Great for lunches.
Cheap, fast, easy and healthy.
Cook once and get 10 meals out of it.
 
I cook all of the normal expected things on our grill like chicken, burgers, hot dogs, steak, salmon, but I also use my gas grill as an oven. I keep a stock of different sized aluminum pans in the house, and I''ll make meatloaf for my husband (did that last week), huge roasting pans of chicken in tomato sauce, I''ve even made a fifteen pound turkey on the grill. It''s much too hot to cook inside, and my exchange for not using the oven and saving those watts is being able to use our air conditioners. It keeps my electric bill more stable.

funny - let me know how it turns out! i cannot seem to make brisket (well) in a crock pot, so i havent made it since march

we use our toaster oven for alot of "small" cooking that can be done for under 15 minutes. Since E works nights during the summer, i tend to cook alot of meals late at night when its not as hot, and i cook about 3 meals at once.

If it isn''t shucked yet, you can put it directly on the grill, the husk will char, but no biggie. Some people like to soak the unhusked corn in water for 10-15 min before cooking.
If already shucked, wrap it in foil. If doing the foil, I put some pats of butter on the corn before wrapping.

A few minutes on each side with a gas grill--longer for charcoal. I think doing unshucked tastes better.

Well you could definitely boil water on a grill, but grilling corn is super easy. peel the husk 1/2 way down and remove the silk, cut off the loose tips of the husk as well. Then replace the husk and soak the ears in warm water (tap is fine) for 5-10 minutes. Grille on all sides until corn is cooked.

I second this method. It kind of steams in the husk. Also, I don''t want to be removing silk when it''s hot off the grill. Not a problem with this method.

We do our corns on the grill, pull all the bits off, season with salt, pepper and a good knob of butter, double wrap in strong foil and grill. Yum.
 
Googling "pillbox hat BBQ" yields nothing.

Luckily, we have AC. In TX, it''s a necessity.

That being said, I HATE stove top cooking when it''s 100+ degrees outside. I''ve been grilling it up lately!
