Cook out recipe ideas

DH and I are heading to NJ for his sister''s annual BBQ this weekend (we''re in RI, it''s about 4 hours). She''s not going to have as much help preparing this year as they have two young daughters who will be in the way and DS'' mom isn''t going to be there this year. Unfortunately we won''t be there until Saturday around mid-morning. The BBQ doesn''t officially start until 1:00ish, so we''ll have some time to help them get set up. Long story short, I want to take some of the cooking load off of her shoulders by making a bunch of stuff to bring. I''m looking for additional ideas for BBQ-appropriate crockpot recipes, salads that don''t need to be refrigerated, and dip type things.

So far my ideas are:

Wild Rice Salad--Uncle Ben''s wild rice with marinated artichoke hearts, black olives, tomatoes and avocado-served cold.
Mango Salsa
7-layer dip

The other problem/motivating factor is that I have dietary restrictions (no gluten, wheat, rye, barley, or oats), so bringing food to "contribute" ensures that there are things I can eat. I can find substitutes for most everything though, so don''t let that temper your ideas!
 
This salad is very yummy and I don''t even like beets normally. Beet Salad with Goat Cheese. It has goat cheese in it though so I would want to at least have it in a cooler during your trip. Also, I like making it with pickled beets as opposed to fresh beets, but either or is good.

This is a non-traditional bbq side, but I like to make these sweet & spicy nuts from smittenkitchen.com. I make them with pecans and walnuts and it has brown sugar, salt, regular sugar and hot pepper (I used chipotle chili powder, smitten kitchen used smoked paprika) and they are coated first with egg whites to keep the sugar/salt mixture on the nuts. They are a BIG hit amongst people. I don''t think any of those ingredients are gluten ingredients! They are also delicioussss.
