How do I make my cookies chewy? Like the ones from Subway?
 
Hubs is OBSESSED with subway cookies. Obsessed! I don''t know if this is the trick, but they sure are buttery.
 
Parchment paper usually works very well for keeping the cookie consistant. And, as strange as it sounds...under-baking for just a minute or two.
 
Underbake. I always have chewy cookies, and it''s because I underbake like crazy. You know how you''re supposed to wait for golden brown? Settle for golden :)
 
Vanilla pudding! This recipe makes great super soft chocolate chip cookies:

1) Sift 4 1/2c flour & 2 tsp baking soda
2) Cream 2c softened butter, 1 1/2c packed brown sugar & 1/2 c white sugar
3) Beat in two (3.4oz) packages of instant vanilla pudding until blended
4) Stir in 4 eggs and 2 tsp vanilla
5) Blend in flour mixture
6) Stir in 4 c chocolate chips and 2 c chopped walnuts (optional)

Drop by spoonful on cookie sheet
Bake 10-12 minutes @ 350 degrees

Ditto. Bake a little under recommended time. Not so little they are goopy. But a bit under recommended = chewy.
 
A higher ratio of brown sugar to white sugar (instead of equal parts) does it as well as the slight underbaking.. cut the white sugar in half.. and replace with the same amount of brown sugar. Brown sugar retains moister more than white sugar, so your cookies will be chewier! Hope that helps.

Yes, it''s totally about the baking under the time the directions give you. If it says 10 minutes, do 8. If it says 8, do a hair under 7. Also, I think baking with butter rather than margarine helps, but we often use applesauce instead of either, and that works well, too.

Gotta love a chewy cookie!!

Sugar cookies are ones that you have to seriously underbake if you want them to be chewy. I have a recipe that says 8 and I do 5, and they''re awesome that way.

Use real, unsalted butter
Use a silpat
*Bake for 8 mins (for a regular sized cookie) --cookies should look uncooked in the middle when u take them out--they will firm up as they cool
 
NF''s pudding recipe sounds promising! I aslo agree about undercooking and increasing the ratio of brown to white sugar. I loove a cookie with a crisp, buttery edge and soft, chewy goodness inside, so I slightly reduce the flour---instead of 2 cups, I use 1.75 or so.
 
Interesting...So general consensus: underbake, use real unsalted butter, use more brown sugar in place of white and slightly reduce the flour. I think I'm going to have to try aaaallll of these suggestions over the weekend

Everyone is right about undercooking them (this also works well for "place and bakes", and other prepared doughs).

Subway cookies are delicious! I love their sugar cookies, I''ve never been able to make them as chewy and delicious as they are.
