So, yes, I did have lots of fun. This was my first time coming in through the kitchen door, as I entered through the front when I went to culinary school. And, boy, I was pretty glad that I had been in a professional kitchen before, because I probably would have been more intimidated/shy and have a lost feeling if I didn''t.
Ludo and his wife, Kristine, are totally sweet, as well as the other cooks.
I got into the kitchen, and was assigned to strip thyme and marjoram. I grated ginger. Peeled, sliced, and fried potatoes! I didn''t think they would let me touch anything hot! Once service started, I was put under the garde manger and got to plate a few dishes. Must practice my quenelles!
And, remember that picture with Ludo in the waves with the two fish? I saw him pull out a Japanese fish knife, and he just filleted two huge codfish all slick-like. I know if I did it, I would have needed lots of space, but he was working in some tight space.
The kitchen door doesn''t always close, so there sometimes was some loud, possibly French words, coming from the kitchen to the dining room.
At the end of the night, Chef Ludo pulled me aside, asked me what I''m doing. I told him I was looking for a job as a prep cook or barista. And I was offered a job!
Funny thing: I woke up, had breakfast, and went to a restaurant supply store. And who do I see but Chef Ludo at the cheese counter, getting a 3 lb chunk of Cypress Grove Midnight Moon.
