Calling PS foodies: LudoBites update!

So, yes, I did have lots of fun. This was my first time coming in through the kitchen door, as I entered through the front when I went to culinary school. And, boy, I was pretty glad that I had been in a professional kitchen before, because I probably would have been more intimidated/shy and have a lost feeling if I didn''t.

Ludo and his wife, Kristine, are totally sweet, as well as the other cooks.

I got into the kitchen, and was assigned to strip thyme and marjoram. I grated ginger. Peeled, sliced, and fried potatoes! I didn''t think they would let me touch anything hot! Once service started, I was put under the garde manger and got to plate a few dishes. Must practice my quenelles!

And, remember that picture with Ludo in the waves with the two fish? I saw him pull out a Japanese fish knife, and he just filleted two huge codfish all slick-like. I know if I did it, I would have needed lots of space, but he was working in some tight space.

The kitchen door doesn''t always close, so there sometimes was some loud, possibly French words, coming from the kitchen to the dining room.

At the end of the night, Chef Ludo pulled me aside, asked me what I''m doing. I told him I was looking for a job as a prep cook or barista. And I was offered a job!

Funny thing: I woke up, had breakfast, and went to a restaurant supply store. And who do I see but Chef Ludo at the cheese counter, getting a 3 lb chunk of Cypress Grove Midnight Moon.

Yes, yes, I'm taking the job! I'm taking a year off, and then will be applying for school in the 2010 admissions cycle.

I had 16 friends come out last night, and they were so fun and supportive.

That''s so NEAT! Boy I''d love to switch jobs with you for a day. I used to be quiet the amateur cook when I had the time. So glad for you! I hope you really enjoy it!

Sounds like you had a great experience. Too cool that you were offered a job- Congrats!

I thought about this today because I had just read the latest entry for a FOODIE BLOG I dig, and it was about LudoBites. It sounded so delish that I had to go make a reservation. Can't wait!

ChargerGrrl, I''m so jealous! I was hoping to get out to CA in August, but it looks like I won''t be making it out there until September, just in time to miss LudoBites - Boo! I will definitely post when I''m out your way, though. It''s looking like mid-September at this point. Perhaps we could get a PS GTG going.

Ah, so weird to see those pictures. I see the dishes in the back, in bright fluorescent lighting, and I KNOW things are going to look more flattering in the darker dining room, but I didn't realize how much different it looks. The picture of the duck breast and carrots tells me that the plate was too hot. =(

I recommend the polenta, the croque monsieur, and the panna cotta. Those are some of my favorite dishes.

Thanks! I''ve worked for two weeks, now. Last Saturday was KARAZZZY: 109 diners, and it was near 1:00 when I left the restaurant.

I''ve been having a lot of fun, learning how a restaurant works and getting lots of hands-on experience. I spent the first week and a half totally terrified of Ludo, but I''ve relaxed once I realized he doesn''t hold grudges.
 
Wow, JulieN, just saw this for the first time and I just wanted to add my very belated congrats! That is absolutely amazing, and no doubt is a fantastic learning experience (and a great addition to a CV!). So so cool!!

This is awesome! Congrats on the job.

I just started catching up Top Chef Masters and was highly entertained by Ludo''s antics on the show. It must be amazing to work with him!
