I really don't think you can get an average for something like that without knowing the number of people, the destination, the formality you want, etc. And even then you can do it on a budget, or you can go all out!
That being said we spent I think about $7,000 for our DW in San Francisco with about 35 people in attendance. That did NOT include plane fares or accomodations for anyone other than us though. They can really be done at all budgets...
One of our options is to have the wedding in DR with only our immediate family. We would pay for their hotel and airfare. In total it would be about $12,000.
I''m probably on a par with you, Blissfulbride, since I''m also going to LV. We''ll have 65 people, and be somewhere in the middle in terms of formality.
I hope to keep the reception to 10-12k. We likely will not have a separate wedding ceremony or a photographer so that we can spend more on the reception, but I''ll still need flowers and an officiant - I hope max $500 for "ceremony related expenses". No favors. No wedding party.

That puts us at $21,500 before adding anything I''ve forgotten, tickets to LOVE, etc. Sigh... I''ve padded the travel estimates, so I can trim those as we get closer to the date and I have to add things I forgot about, but still. So much for my cheap elopement!
Well, if the $160 includes food and drink and everything, that''s not so bad. (Everyone who isn''t getting married on the strip in LV, look away. Unless you''re getting married in Manhattan, maybe.) That will be about what I end up spending. The difference would be the extra 25 guests. Sigh... I need to remember that we love them all a lot.
