Apple recipes, anyone?

DH and I are hosting our 2nd Annual Apple Fest in three weeks, and I''m looking for some good recipes that use apples.

We get all of our friends and family with young kids together, go apple picking late morning, and then everyone comes back to our house and we make an apple-themed feast together. We had so much fun doing it last year that we''re making it an annual event.

I''d love to see all of your recipes that use apples, but I''m most interested in main course dishes that either use apples, or would go well with an apple-heavy meal. We also made apple votive holders last year, and that was a blast. If you have other crafty or decorating ideas with the apples, I''d love that, too!

Here''s what I''m thinking about putting on the menu thus far, you''ll see there are no mains, and mostly desserts!

- Apple butter
- Apple cole slaw (soooo delicious!)
- Fruit salad
- Apple sauce
- Apple pie
- Apple dumplings
- Apple crisp
- Apple squares
- Apple loaf
- Caramel apples
- Apple-flavored Jell-O shots for the kids (non-alcoholic, of course)
- Apple martinis for the grown-ups
- Apple punch
- Hot apple cider

We set up little stations and everyone helps with little parts of the recipes. We send home a lot of the foods (apple butter, caramel apples) so that''s why there''s so much on the list. I also make some of it ahead of time, of course.

What should I make for the main dish? I don''t even remember what we had last year!

I need to work on my caramel apple technique. All the caramel pooled at the bottom of the apples by the time they dried. They were still delicious, though!

I have really good apple crisp and apple cake recipes. Also, for a main dish there are apple pork chops and apple stuffing.

I will post the recipes if they''re what you''re looking for.

I''ve never made pork chops before, but they sound delicious.

If it isn''t too much trouble to share, I''d love those recipes. Apple crisp is my favorite dessert in the world. Yummmm.
 
Pork Tenderloin with Roasted Apples and Onions [modified from Epicurious]

* 1 large pork tenderloin (about 14 ounces)
* 3 tablespoons olive oil, divided
* 2 tablespoons whole grain Dijon mustard
* 1 large onion, sliced
* 2 medium Granny Smith apples, peeled, cored, sliced 1/4 inch thick
* 1/2 cup dry white wine or dry white vermouth

Preheat oven to 450°F. Season pork with salt and pepper.

Heat 2 tablespoons oil in large nonstick ovenproof skillet over medium-high heat. Add pork and sear until all sides are brown, turning occasionally, about 5 minutes. Transfer pork to plate. Cool slightly. Spread mustard over top and sides of pork. Add remaining 1 tablespoon oil to skillet. Add onion slices and apples; sauté over medium heat until golden, about 5 minutes. Spread evenly in skillet and sprinkle with salt and pepper. Place pork atop apple-onion mixture.

Transfer skillet to oven and roast until apple-onion mixture is soft and brown and meat thermometer inserted into center of pork registers 150°F, about 15 minutes. Transfer pork to platter and tent with foil. Let stand 5 minutes.

Meanwhile, pour white wine over apple-onion mixture in skillet. Stir mixture over high heat until slightly reduced, about 2 minutes. Cut pork on diagonal into 1/2-inch-thick slices. Spoon apple-onion mixture onto plates. Top with pork and serve.

Serve with thyme roasted red potatoes and string beans.

note: This would work with pork loin roast also but I would roast the meat at 350F until the internal temp reaches 150F. Of course the bigger the loin, the more apples and onions, etc. you would use.
 
Apple Tart

1 pre-made pie crust
3 large apples
1 or 2 TB sugar plus more for topping
1 TB flour
some cinnamon
a bit of ground ginger
a bit of ground nutmeg
a bit of ground clove
a bit of ground coriander
a bit of ground black pepper
1/2 lemon
1 TB or so of butter
note: some and a bit are technical terms used in Italian cooking. I like a lot of cinnamon and much less of the other stuff. Put it in to taste.

Unroll the crust and put it in a pie plate.

Peel, core and slice the apples. Put them in a bowl and add sugar, flour, spices and mix. Squeeze lemon over coated apples. Mix some more. Pile the apples onto the pie crust and spread them out a bit. Dot with butter.

Fold the edges of the pie crust up over the apples [tart will be mostly open face]. Sprinkle crust with sugar.

Bake at 400F until it looks done [25 - 35 mins or so].
 
We had an orchard when I was a kid! We made and canned SOO many apples. But, I still love them!

Apple Crisp

4-5 apples pared and sliced
1 C flour
1 C brown sugar
1 tsp cinnamon (I usually use lots more)
1/2 to 1 tsp nutmeg
1/4 tsp salt
1/2 C melted butter

Put apples in 9" pie pan. Mix all ingredients. Spoon over apples.
Bake at 375* until apples are tender.




Apple Cake

2 C sugar
1/2 C butter
4 C chopped apples
4 eggs
2 C flour
1 tsp baking soda
1/2 tsp baking powder
1 Tbsp cinnamon

Cream sugar and butter. Add eggs and apples and beat well. Add dry ingredients and mix well. Pour into greased 9x13 pan. Bake at 350* for 45 minutes.

Sometimes I''ll double the recipe and put it on a cookie sheet and make apple bars.



Fried Apple Rings

apple rings --- core apples with a corer and slice into rings
sprinkle with lemon juice (to prevent browning)
make pancake mix (I prefer buttermilk mix) with 2 C mix and 1 1/2 C water and nutmeg and/or cinnamon
coat apple rings in batter and fry until golden (about 3 minutes depending on thickness)
place on paper towels to drain
sprinkle with confectioners sugar or cinnamon/nutmeg or cinnamon/white sugar





Here is an APPLE PORK CHOP recipe that I haven''t tried yet but looks good.

Porkchop Apple Casserold that also looks good but I haven''t made.

My own grilled apple chops are just made up. Use a little olive oil and seasonings on chops and throw them on the grill. On the stove top mix some sliced apples, apple cider, onion, garlic, (optional cranberries) and whatever else seems good. You may need to thicken a bit with flour. Cook until it''s beginning to thicken and baste chops a couple times. When the chops are done, place them on a plate and pour apple gravy over top or along side.

This Apple Stuffing could be a meal of it''s own.

I''m not usually a fan of stuffing, but Rachel Ray''s

Stuffin Muffins are better.

I made an Apple-Basil-Chicken Salad last week that was soooooo yummy (I used for sandwiches). I don't have an exact recipe because I was trying to copy something I had at a restaurant, but the ingredient amounts are pretty easy to figure out if you've ever made chicken salad before.

Chopped Chicken Breast (I used rotisserie for ease and extra flavor)
Chopped Granny Smith Apples (I liked the tartness of these, but any kind would work)
Basil Chiffonade
Mayo (I used light)
Chopped Celery
Lemon Juice
Salt/Pepper to taste
 

Mmmm apples ! Here’s my favourite apple spice cake recipe



Apple Spice Cake [makes 1 Bundt/Tube cake – 14 servings(?)] (Prep ½ hour, Bake 1hr)



Dry Ingredients:
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon salt

Wet Ingredients:
1/2 cup butter or margarine, softened
1/2 cup orange juice
1 1/2 cups white sugar
4 eggs
1 tablespoon vanilla extract

Leavening
1 teaspoon baking soda
1 tablespoon warm water

Fruit
3 apples - peeled, cored and chopped
1/2 cup raisins (soaked as per recipe)

1/4 cup confectioners' sugar for dusting



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Butter a 10 inch tube pan (or Bundt pan).

Cover raisins with warm water, let soak for 10 minutes and then drain.
Whisk together flour, spices, and salt. Set aside.
Cream together butter or margarine and sugar. Mix in eggs, orange juice and vanilla.

Stir together soda and 1 tablespoon warm water, and mix into the sugar mixture.
Stir in flour mixture, apples, and strained raisins until well blended.

Pour batter into prepared pan.
Bake for approximately 1 hour, or until a tester comes out clean.
Cool in pan. Once cool, shake pan to loosen cake. Turn onto plate, and dust with confectioners' sugar.

You can substitute pumpkin, carrot or other fruit for the apple (longer cooking time may be necessary). You can also add a dash of maple extract if you want to. Batter can be used to make 24 small muffins (bake 45 min). This cake makes a delicious breakfast.
This is a lower fat and sugar variant of Kristin Pan’s Allrecipes Apple Spice Cake.


Main dish Idea: There are some excellent apple and chicken curries out there, but I've only eaten them, never cooked them.

Ooh I just remembered!

I had some divine apple and brie montecristo sandwiches at a bakery (Vie de France) in Japan once.

Thin slices of apple (sprinkeld with sugar) and brie in between two slices of fresh white bread dipped in frech toast egg (egg milk, cinnamon and vanilla) and fried golden brown (then dusted with sugar again). It was served cut into triangles.

I make these pannini''s at home with soft ciabatta - it''s got chicken breast, thin apple slices, creamy brie and red pepper jelly. They are so delicious and so easy to make!
