Holiday Cookie Recipes

I made Gingerbread cookies and These Chocolate Crinkles w/ Peppermint Hersey kisses for the top. I put the kisses in after I baked them, or they melt in the oven.

I also added the mini chocolate chips in, the mix, like 1/4th cup at the end to give it an extra punch of chocolate.

Ingredients
2 cups granulated sugar
3/4 cup canola oil
1 cup HERSHEY'S Cocoa
4 eggs OR 2/3 cup liquid eggs(such as AllWhites)
2 teaspoons vanilla extract
2-1/3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup powdered sugar for rolling
Directions

1. Combine granulated sugar and oil in large bowl; add cocoa, beating until well blended. Beat in eggs and vanilla. Stir together flour, baking powder and salt. Gradually add to cocoa mixture, beating well.
2. Cover; refrigerate until dough is firm enough to handle, at least 6 hours.
3. Heat oven to 350°F. Grease cookie sheet or line with parchment paper. Shape dough into 1-inch balls; roll in powdered sugar to coat. Place about 2 inches apart on prepared cookie sheet.
4. Bake 10 to 12 minutes or until almost no indentation remains when touched lightly and tops are crackled. Cool slightly. Remove from cookie sheet to wire rack. Cool completely. Makes about 6 dozen cookies.

For a year I have been looking for a dependable and basic chocolate chip recipe that doesn't have any ridiculous steps (such as 24 hours in the fridge) and I finally have it. I made a couple of modifications to another recipe and BAM; magic.

So here it is in case anyone is interested.

Chocolate Chip Cookies
(Makes 30 cookies)
Ingredients
1 cup butter, softened (two sticks)
1/2 cup granulated sugar
1 1/2 cup packed dark brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
2 cups semisweet chocolate chips (1 bag)
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Cream together the butter, white sugar, and dark brown sugar until smooth and creamy (this takes some time, don’t rush). Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water in a small prep bowl. Add to batter along with salt. Stir in flour and chocolate chips. Drop by large spoonfuls (golf ball size) onto ungreased pans lined with parchment paper.
3. Bake for about 12-14 minutes in the preheated oven depending on how you like your cookies, or until edges are nicely browned (14 minutes makes a crispy cookie with lightly browned edges).
