Yum...lots of good recipes here!

I have a good crockpot mac and cheese recipe, too.

1 (8 oz) box macaroni

1 (12 oz) can evaporated milk

3 eggs beaten

1/4 cup margarine

3 cups shredded cheddar cheese

1 teaspoon salt

1 1/4 t. pepper

Boil macaroni until done, drain. Add remaining ingredients and mix well. Pour into lightly greased crock pot (I use an oval one). Cook on low for 3 to 3.5 hours. Do NOT stir while cooking.

Here is one I like that is easy:

Southern Pineapple Casserole

1 (20 oz) can of pineapple chunks

1 (20 oz) can of crushed pineapple,drained

6 Tablespoons all-purpose flour

1 cup sugar

2 cups shredded cheddar cheese

Topping:

40 round Ritz (or similar) crackers, crushed

1 cup butter, melted

Directions:

Preheat oven to 350 degrees. Drain pineapple chunks and reserve 1/4 cup of the juice.

Combine flour, sugar, cheese, reserved pineapple juice, pineapple chunks and crushed pineapple in large bowl. Pour mixture into 1 1/2 qt rectangular baking dish. Then mix the cracker crumbs with the melted butter in a small bowl, then sprinkle over the pineapple mixture.

Bake in preheated oven until golden brown, about 30 minutes.
