so skippy answered my distress call last night for a strawberry pie recipe - and here it is! we made it last night and stayed up late to enjoy it :) thanks skip!

i should also say - i modified it a bit, in that i added half raspberries, which looked particularly wonderful when i was buying the strawberries - so i guess, to be accurate, it''s a strawberry and raspberry pie. :)

Would you or Skippy post the recipe? I searched, but didn''t see it. I was just thinking this morning that a strawberry/raspberry pie would be perfect for my SS''s 6th grade graduation on Thursday and, lo and behold, here you go posting a picture of one that looks absolutely delicious

sorry i didnt answer any earlier than this - i''ve been in manhattan at a wonderful restaurant called ''park avenue summer'' at one of the regular Zagat dinners. the park avnue restaurant is a very interesting place; every season they gut the restaurant and redecorate and rename the restaurant - ''park avenue summer/autumn/winter or spring'' - depending on which season it is. they serve only seasonal foods, and this evening they teamed up with an australian wine company to do a food/wine pairings. it was fabbo!

skippy, thanks so much for posting the recipe. for anyone interested, the changes i made were:

1) 50% strawberries and 50% raspberries. it gave it, i thought, a more interesting flavor.
2) i also added a little vanilla (1 teaspoon) to the cornflour mixture.
3) for the pie crust, i bought frozen pastry, then made the crust myself. i would normally make the pie crust (short crust pastry for anyone who wants to give this a try) from scratch, but we only started this at 9pm last night, so leaving the pastry in the fridge to cool for an hour, as onehas to do with home made pastry, wasnt really an option.
4) i did NOT add the 1/2 cup of sugar (NB the recipe given is for 2 PIES - so halve everything if only making one pie). i just used 3 oz of strawberry jelly powder and it was plenty sweet enough.

prep time, not counting cooling of mixture or baking was no more than 20 minutes - very easy!
