My husband and I carved a couple of pumpkins today and considering these are our first ever (well, since we were children), we were surprised at how well they came out! I carved the funny/scared (?) face and my husband carved the skull and crossbones.

If anyone else plans to carve pumpkins, be sure to add your photos to this thread!

I didn''t carve mine. My daughter is 21 months so no sharp tools! Here she is....

From what I understand of the US lifestyle, you carve pumpkin, but I hear that you don''t eat it as a savoury vegetable? Only in sweet desserts?
I hope you made a savoury pumpkin soup with your inners of your jack-o-lanterns! Yum!

Cool jack-O-lanterns guys!

Lara- It has always been my understanding that the big pumpkins are not for eating. The only ones that can be used for pies or soups are the small pumpkins. I did have some really yummy pumpkin soup this weekend... not sure which kind it was made from though. The only part we ever ate from the large, carved pumpkins were the seeds. Sprinkle a little Cajun seasoning on and bake them... mmmmm! Do you guys eat the large pumpkins?
 
Hmm, I''m not sure how large ''large'' is. I''ve got a feeling that we do. Certainly, we eat the pumpkins that are big enough to have seeds in them. 35cm diametre? No problem, we eat them alright! Do you eat pumpkin roasted, with roast meats? Yum, Yum, YUM!
 
Our large pumpkins that we carve are maybe 12-15 inches wide. The smaller ones that are usually cooked are probably 5 or 6 inches wide. We also have those tiny ones that are fat and flat... they''re just decorative though. Until this year, I had only eaten pumpkin pie and seeds... now I''ve had pumpkin soup as well. Never had roasted pumpkin though! I''ve really never heard of anyone here veering too far from the usual pumpkin pie.

Bree, these are SO COOL!!! Did you use stencils? DH and I just did ours last night, and we did use stencils. They turned out great! We did one with a haunted house and one with a crow sitting on a branch. I''ll see if I can get some pics to post!

You can certainly eat the large ones here too, we always did! But my mom always said that like with any vegetable like that the bigger they are often the grainier the flesh, so the smaller ones often yield better flavor. Anyway, we certainly eat pumpkin in savory things in Massachusetts!
 
Thank you all! luvmyhalo and SailorsSweet- what cute pumpkins! Sailor, did you get that pattern from a book? We bought a 'carving kit' from Target with stencils and our book had a Halloween Kitty like yours in it.

Great pumpkins Ebree! I''ve always thought carving pumpkins was very difficult to do but maybe I''ll give it a try!

Oh Oobiecoo, go directly to fridge or benchtop (Jack-O-Lantern leftovers!! haha) . Find some pumpkin. Cut into pieces (chop the skin off if you can be bothered!). Put in roasting dish with lots of olive oil. Season with sea salt, pepper, whatever. Put in medium oven, turning every 25 minutes or so. Remove when caramelised and crispy on the outside, soft and squishy on the inside!
Also, this roasted pumpkin makes really fantastic pumpkin soup! Mash it up with chicken stock.
 
Ok this is from a few years ago, but it''s a carved pumpkin and it took me about 6-7 hours to do completely. The red fire is candied lemons dyed red, and the green dragon is candied limes dyed green. I carved this for a contest in culinary school and won People''s Choice and Most Creative. When it was lit the lemon and lime had the effect of stained glass.

Here are ours - a witch with a cauldron and a vampire face. The witch was my husband''s first jack-o-lantern ever! I think he did a great job.

I am carving with my BF tonight, so hopefully I can get some good pics! I think I want to do a haunted house of some sort.

Sumbride-I ADORE your pumpkin! I have also thought about doing that, I have a friend who did "HOPE" in a block, with the O like Obama''s. It was so cool!

Holy cow! These are amazing.

I have four untouched pumpkins sitting on our front porch and now I just feel like I''m going to ruin them with my little triangle eyes and toothy grins!

I''ll have to find a stencil somewhere and see what happens.
