i'm thinking about light pink saphs that look similar to pink diamonds (that peachy pink color). do you think this is possible? I don't know much about gemstones! I just can't swing an extra $1K to $3K for pink diamonds (that was the price for pinks in a recent quote that I received).

They may look similarly coloured in a still photograph, but they will look very different IRL - sapphires simply do not have the diamonds' dispersive capabilities, and you will see a very different type of performance from a sapphire halo. If you're looking for the "look" of a diamond halo, I would just save for the diamonds - a sapphire is beautiful in its own right, but if you're looking for a diamond substitute I think you may be disappointed.
