I''m planning what goodies to make for the Holidays and I remembered this FUDGE!!!!! It''s just an incredibly easy recipe and soooo delicious. I''m not able to bump up the old thread so here it is:

I''m pasting the recipe from this thread here:

1 cup butter, plus more for greasing pan
1 cup peanut butter
1 teaspoon vanilla
1 pound powdered sugar

Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and powdered sugar to peanut butter mixture and stir to combine with a wooden spoon. Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.

Ohhhh, so good....there are a few squares of PBF in my kitchen right now...I may have to attack them when I get home today!

Ooh, that does sound good. But I have to ask: Do you think it''d work with margarine? I can''t have dairy, but if I subbed marg for butter, it''d be something I could eat!

Libster, you are so sweet to remember the easy fudge. I just added extra PB to my grocery list so I can make some too.

ebree-i have no idea if the margarine will work..hopefully some of the resident baker''s will chime in.
 
I''ve used margarine and it''s fine. Not as good as butter, but what is?!

DH requests this regularly. It''s so easy, keeps really well, and it''s delicious!

I wonder if you substituted the PB for nutella would it still be good but make hazelnut fudge?

Thank you Mrs.Salvo!!! I have made this about 100 times since your post! I like to use 'just peanuts' peanut butter.


PS. It freezes well. Hehehe, I need to make some now to keep in the freezer over the holidays.

Up here in Canuck-Land we use metric, and the sugar is labelled by volume not weight....

Can you tell me how many cups would be a pound? (and do I assume correctly, that "powdered sugar" = "icing sugar"?

Well, my powder sugar was not packed down and it came out to 3 3/4ths cups = a pound but I guess it may vary? Hope that helps and the fudge is YUMMMMMY

For some odd reason I am feeling the need to bake all the old faves for sweet DH this year....but he has a hankering for fudge and this one looked very similar to the one his Mum used to make (but never wrote down the recipe).

Mmmmmmmmmm! This fudge is sooooo good! I made it for a party I went to Friday night. I was a hit. I had a bit left over and while MIL and FIL were over they ate it! They loved it!
 
I made a batch too this weekend. I''m thinking about making some more to give to my kids teachers along with the giftcards I got them. who doesn''t like fudgy bakedgoods right?

I''m so glad you all love it and it''s just so easy!!
 
This stuff is so good, I''ve made 2 batches in the last week. It has zero calories, right?
