Looking for some one-dish casseroles that can freeze well

I'm coming to a couple of weeks when my time to cook will be zero. This weekend is free, though, and I'd really like to prepare some one dish meals that will store well in the freezer.

When I'm ambitious, I freeze chicken parts and cuts of meats but when I come home after a hard day, I don't even want to think about it; I just want to plop something in the oven.

But I'm not wanting to eat take out or junk food either.

Any ideas?

I tried this with a baked pasta dish, and it was awful. The pasta just got mushy and by the time it was heated it was bad enough to just toss out. I'm still looking for casserole sorts of things that freeze well.

I've had the best luck with stew-like things. They freeze well and stand up to being reheated. I store enough for one meal in each Ziplok so all I have to do is pull a bag out and plop it in a pot to heat. (the bag is easy enough to just peel off or I can stick it in the microwave for 20 seconds).

My favorites:
chicken soup
chicken stew (great to heat then dump in crust for pot pie if you're ambitious)
stifado (Greek stew -- beef & onions)
chili
beef stew (can also go into a crust for a pot pie)

Lasagne freezes well, and shepherd's pie. I've never tried to freeze this one, but it's my favorite one dish, easy peasy casserole. I am a fairly mild eater, so this can be spiced up with whatever flavors you like, I think cayenne is a common one for Chicken Divan:

Chicken Divan
Cubed chicken breasts, browned, salt and peppered. I usually go with about 4, but it depends on how meaty you like it.
2 cans cream of chicken soup
2-3 cups of shredded cheddar cheese; flavor according to taste here.
1 medium bag of frozen broccoli
1 cup mayo
Diced onion, to taste.

Place frozen broccoli on the bottom of your casserole pan so it mostly covers in a single layer
Layer the browned chicken cubed on top of the broccoli

Mix, cream of chick soup, mayo, cheese, and onions; pour on top of the chicken and broccoli.

Bake at 350-375 till brown at the edges and bubbly on top, about 30 mins.

Also, I just did a quick google for 'freezer meals' and there are whole blogs dedicated to just this, there are hundreds of ideas out there!

Spanokopita works really well; I make this once in a while, casserole style. There's tonnes of recipes out there, but I keep it simple and use only frozen chopped, spinach, sauteed onion, crumbled feta and ricotta. No need to brush the phylo pastry layers with oil or melted butter -- just use your spray oil. Then cover and pop into freezer and when your ready, cook from frozen.

Thanks ladies. That chicken divan looks delicious, aviastar. I'm definitely going to try that this weekend. The reason I asked here was that the majority of the casseroles I saw were pasta dishes and I don't particularly like them after they're frozen.

I wonder if beef stroganoff would freeze well. I'm not too lazy to cook noodles!
