If I go with a 5.25 x 5.25 mm Asscher, could I get away with a 2 mm Knife Edge setting, or would 2.5 mm be better? Really trying to salvage my budget here. FWIW, she wears a size 7.

Depends on the shape of her fingers, I think. If she has particularly long and slender-looking fingers, I think a 2mm might be ok, but a 2.5 would be safer. I have fairly long/skinny size 4.5 fingers and I didn't like a 2mm band on my hand (my e-ring band is 3mm, solitaire is a 7.3 x 5.2mm emerald cut), but some of that is personal preference.

Also remember that the higher the dome/knife edge, the narrower the band looks. A half-round or flat 2.5mm band will look wider than a 2.5mm knife edge or high-domed band.

Could you get the setting in WG instead of platinum to save on that?
 
This is a vintage ring I just got today(!!). It''s a .60ct and 5.4mm. The band is 2mm and spreads to 3mm up the split shank, and it''s a size 5.5.

Also consider her preferences! Personally I prefer thin bands. 2.5mm is alright, but I like the thinner 2mm better. My future MiL gave me a family heirloom wedding band that is 4mm...which I would love to wear as a wedding band, but it''s way too wide for my taste! So she told me to wear it on another finger instead, which I happily do. XD I like wider rings for my pointer and middle fingers, just not for my ring finger or pinky.
